well, the most one-sided in my favor was easily the first fight with Malak in KotOR 1 where

despite beating Malak like a red-headed, paraplegic stepchild, Bastilla somehow finds it necessary to sacrifice herself so you can "escape" from Malak

as for most one-sided fight in the opponent's favor, excluding "supposed to lose" fights, the one you mentioned is probably the best example i can think of.

I hated this. So much.

I suppose aside from that, Hisoutensoku, numerous examples of beating the computer 2-0 and taking no damage on the highest difficulty. Obviously, I can only do this with some characters (and the AI is odd about not using super moves very often at all), but it's still nice.

For me it would probably be the secret boss of SMT: Digital Devil Saga. His ultimate attack did about 17,000 damage to me on the first turn before I could move. The max HP for my party was 999.

Last level, The isle of swill, in Hogs of War, for those of you who dont know its basically worms but with pigs on the PS1.

Anyway basically you face off against a team that out number you, are a higher rank than you could ever achieve which basically means they've got loads more health than you and unlimited airstrikes and can hit you on every shot regardless of where you are every time.

Bare in mind that you have a ten second time limit on each of your turns and the water in the map is poisonous.

had to poison each one of them and just wait in the invisible box weapon for each of my turns and wait while each of the 11 enemy pigs lost 10 health off a 300 life bar each turn

Final boss of Birth By Sleep for Terra. God dang it I hated that guy! I dont want to spoil anything, so I'll just say that the whole boss fight could have been avoided, if some one actually noticed how freaking evil the main bad is! It took me three days to beat him, and when I finally did, it was ten at night and I screamed "YES!!!!!" once I won. I don't think my parents were too happy about that.

Update:
Oh! And Sepheroth in Kingdom Hearts 2! I went in there thinking "this is going to be fine." Then, dead in the first 2 seconds. I just sat there in stunned silence for a little while my brother laughed at me.

Worst. Boss. Battle. Ever. Both of them.

The "Boss Fights" in Batman: Arkham Asylum. You'd think that they would figure out that sending unarmed thugs up against Batman is like sending a tabloid reporter who makes disingenuous assertions against Commander Shepard. Adding a single gimmick like an electrified floor, ten seconds of evading something, or someone on steroids really doesn't count as a boss fight.

My first encounter with deathclaws in Fallout New Vegas.

That's nothing.

I had just gotten my sniper rifle and was heading towards Legion country when I spot a death claw. I pop a cap in its lilly ass and it dies. Little did I know that it was a BABY death claw. Needless to say, I pissed off its mom, dad, uncle, sister, step cousin, great grandmother, and the death claw version of Hannibal Lecter. My death scene was surrounded by like 20 of the bastards.
