This is not a "complain about games you hate" thread. Please recommend causal titles as well (that is not on the Kinect), and no Halo/Gears of War/Call of Duty games.
One important question that people really haven't mentioned yet, what kinds of games do you like to play?
If you like RPGs then BioWare is the developer of choice, people have already mention the Mass Effect games, both are great, and if you are getting the console during the holidays, Mass Effect 3 will only be a few months off from coming out. I also recommend both Dragon Origins(Get the Ultimate edition if you do get it, it contains all the DLC) and Dragon Age 2(don't believe all the flak it has receive, if you look at it through legitimate design stand points, it only has one flaw, thought it is overshadowed by how awesome the story, characters, and gameplay is).
As people have pointed out, get the Orange Box, if for nothing else, get it because it comes with Portal.
Both Fable 2 and 3 are good.
One thing I will point out, and I make this as a recommendation to people that have made some snarky comments to you:
Just because you are getting a 360, doesn't mean that you have to just look at the 360 exclusives. I would say with all the consoles and handhelds I have had over my 20 years of gaming, I would say that only about half of the games I have are platform exclusives.
On that note, will recommend Castlevania: Lords of Shadow, of course it was originally made for the PS3, who cares, it is great and you can get if for the 360.
Castlevania: LoS, is a reboot of the long running Castlevania series. You really don't need to know too much about the series to enjoy it, but if you have played some Castlevania games in the past, it will make some of the reveals, and shout-outs all the more sweeter. People harped on it because it isn't like the 2D mansion crawlers that heavily populate the series, and that is what I find refreshing about it. It is a very well put together hack and slash platformer. People also ragged on it, saying it was a God of War rip-off, but from my experience 95% of the game is made up of things that can be traced all the way back to when the series began on the NES.
Also, it is in the high end range for 360 graphics, the game is gorgeous, though that is only the icing on the cake.
But other than those games, I don't know exactly know what else to recommend that I like on my 360, that isn't the 3 Halo games I have for it, and you already mentioned that you like Borderlands.
