Your use of one wasn't appropriate. You should have written "...bye" as the pause was before and not after. Only put an ellipsis at the end of a sentence if you're expecting the other person to finish that sentence. Don't use ellipses very often either, if you think you need ellipses multiple times in most conversations you're using them way too liberally.
I don't see why she got so mad though, obviously she didn't know that you were misusing the ellipsis.

EDIT: I had used the elipsis because it had been several minutes after she'd said bye. Forgot to point that out.
