My favourite choice is Shin Megami Tenseiigital Devil Saga 1 and 2. All the main characters among others are voiced by big names in anime voice acting. Here's a list of some of the main characters, their VA's and several other things they've done.

Many people probably disagree with that, but I think that both Nathan Drake and Ethan Mars came out as very likeable (in severely different ways) because of the VA talent.

Yuri Lowenthal as Prince of Persia. Notably in the Sands of Time, where he perfectly balances courage, vulnerability and haughty bitchiness.

Also, for some reason, Cam Clarke in Grandia II. I was young when I played it (on the Dreamcast, R.I.P.) but it just made the whole thing seem more like a legitimate story to have Leonardo in it.
Wendee Lee's in that one, too, and every time I hear her voice, I go "Oh yeah! Elena!"

i agree about RDR, haven't played uncharted. Rdr was all fantastic, except possibly for jack.

Any of Tim Shaffer's game always have supurb voice acting.
A nod to the Metal Gear Solid series as well.
Uncharted too. If they ever make an Uncharted movie, they HAVE to get Nolan North to play Nathan Drake.
