For starters, don't get into 'anime' because it's an umbrella term which doesn't really apply to content. It's like saying "I can't get into British books." There's plenty of variety within anime.
Fullmetal Alchemist is good if you want to go in for ethical dilemma and mild mindfuckery in between Ed being a hilarious bastard. Plus the dub is actually REALLY good so you don't have to hunt around for the subtitled version to get the actual story.
If you'd like something in the heavy mindfuckery range then Evangeligon is the way to go. I am being completely serious when I say that a girl in my dorm watched the whole season nonstop over the course of about 30 hours and when I went to check on her after she reached the end she was wide eyed and shaking. Also giant robots which bleed and penguins which live in fridges.
In the lighter ranges Golden Boy is one of the funniest things I've ever seen. Only about 6 or 7 episodes long too so you can get through it quickly. Same is true for the Shinesmen, who are businessmen Power Rangers with colors like Sepia, and Dragon Half, which is a special kind of crack which can only be experienced. Both Shinesmen and Dragon Half are 2 or 3 episodes long.
Also in the lighter side is Ranma 1/2, though it runs forever. It's made by Rumiko Takahashi who also did Inuyasha, but it suffers from less angst and has a whole lot more silly. Once all the major players are introduced it's like the Simpsons; once the particular story of the day is done with then it's never mentioned again. Each story you get a new kind of martial arts, like martial arts gymnastics or martial arts tea ceremony. The varied ways that normal things are turned into weapons is pretty neat.
