To answer your question, yes indeed I do dislike the degree of prejudice the elites in multiplayer recieve and I also dislike how few of us there are compared to the Spartan populace.
I mean I have a lot of friends who play Halo and all of them play as Spartans. We have splitscreen parties with seven Spartans and I am the one elite and man, do I stand out.
Naturally the bullying starts, partly just to annoy me... in fact in the presence of my other friends I think that's the main reason.
As for Xbox live, well I guess people dislike Elites for the events in the Halo story, I can see why they would not like the Elites based on what they've done to the human race in the past (the only thing the Elites did wrong was not finish the job if you ask me) but that's really no excuse for bullying the people who play as them, or making youtube videos dedicated to mocking them.
Sometimes I think the whole 'I can't headshot elites' is just an excuse on behalf of a crappy shot but hey, that's just me.
I always liked playing as the Elites in multiplayer partly becaue of how awesome their race is, partly because I like being unique and mostly because it just feels right for me personally. It does annoy me that people can't accept that, plus that whole 'killing evil aliens hell yeah humanity' thing really puts me off to a degree and I find it hard to relate to, hence the Elites are the logical choice for me.

General consensus is... the Elites are finally getting proper attention in multiplayer.
I don't know why, but every time someone vocalises patriotism for humans it sounds more like:
"GRAAAAAAAGH GENOCIDE THE ALIEN SCUM!!!"
"... wouldn't that make us just as bad as them? Thus losing any moral high ground gained from-"
"-FEH!! WE ARE HUMAN AND AS SUCH ARE WORTHY OF NOTHING BUT GREATNESS. WE ARE TOO COOL FOR A MORAL CODE AND PRACTICES OF GENOCIDE ARE PERFECTLY ACCEPTABLE AS LONG AS WE ARE THE ONES DOING THEM!!"

And while it is true that on Xbox live these days the Elite and Spartan have more or less finally put their differences aside, it's worth remembering that no matter what there will always be morons online who take you on for being an Elite, it's a stupid thing to get riled up about and largely I think this is just due to the idea that playing as Spartan/Elite has created some kind of fraction in the community and split into two different groups.
I can't really comment on the gameplay alterations other than that the Elite model has undergone like, a million changes to make it more fair and yes sometimes a shot is missed because of the angle of the head but.... honestly, I don't really see how the make or break point of winning a game of slayer or SWAT or anything like that is ever made by sniping someone facing the other way, moving in the opposite direction to you.
If they are charging head on, then you can headshot just like a Spartan and it's only when they are moving towards you head on that they pose any kind of threat.
As a note, even if you can't head shot them, you'll find that sniper bullets still hurt. One shot takes down the sheilds, the next kills.
So the only major gameplay problem is two bullets instead of one.
So even if the notion that you cannot shoot elites from behind is a valid one, it's still hardly a worthy complaint and it certainly isn't worthy of people making angry:

Like you said, it is not a big problem for elites as a whole with the whole 'racism' thing (note the quotation marks as this is not technically counted as racism yet fits the criteria) but everytime I get shot by my own team, repeatedly, and notice that my team is made up of Spartans I can put two and two together. I also note that more diverse teams rarely have the same problem.
Plus, every time I see a player with a name like 'SPARTANZRULE' I can tell he's not going to start liking me in a hurry.
Given that my entire Halo playing social circle play as Spartans predominantly I am aware that I am destined to always be the 'token elite' because in truth I just like playing as one.
However, this mindset birthed my new schtick as the Halo fan/genocidal alien of the Escapist so that's kind of a plus.
I apologise if I seemed a little harsh in any way in this reply, I try only to be informal but it's just that I've heard this said many times before and it does annoy me after a while.
However, I understand exactly where you were going with this and you had every right to question my motivations behind some of the statements. Hopefully I have clarified that a little.
