Dangerous Waters. It's pretty much every simulation by Sonalysts (one of the greatest Navy sim developers of the past decade) packed into one game. You can command pretty much any platform. I still have fond memories of playing Sub Command as a kid, stalking the Russian Carrier Kuznetsov in my Seawolf.
