Simple enough, I suppose, but just in case, here's the criteria:
1. It needs to be at least a decade old
2. It needs to be critically acclaimed
3. It needs to be a game that is still talked about today

The classic games I haven't played that I can think of off the top of my head would be all of the decade old installments in the Silent Hill, Metal Gear and Final Fantasy series (with the exception of Final Fantasy VI).

I was going to say Psychonauts, but your draconian 10 year cut off ruined that for me.

I could say "Tie Fighter", but it's not really still talked about today.

You've covered all your bases, sir.

Silent Hill and Silent Hill 2. Unless ten minutes counts as "having played".

Actually, I could put in quite a few so long as the requirement for "having played" a game means you got past the first starting area. Baldur's Gate and sequel, Morrowind, Planescape: Torment, Super Mario Bros. (any of them, really), Super Metroid, Link to the Past, Final Fantasy VI, and so on...

Fire Emblem for the GBA. My friend owned one and I was meaning to borrow it from him but never got to it.
Silent Hill
Metal Gear Solid I've played the 2nd and 3rd but never the first.

Any of the D&D based games, System Shock 1+2, Fallout 1+2, Castlevania: Symphony of the Night(I have it, I've just never played more than a few minutes of it), LoZ: Link's Awakening, the Monkey Island games or any other popular point-and-click game, Doom, any popular Doom clone from the '90s and early '00s, Quake in all it's many forms, Halo: Combat Evolved. Also, you can pretty much add any popular PC game from the '80s to the early '00s that I couldn't be asses to list. I'm sure there's plenty more.

Most of them. I played FFX and Ocarina of Time. I played KotOR, X-Wing, and Baldur's Gate. I played Monkey Island for the first time about two years ago. I've played all generations of Pokemon except two, but I played SoulSilver when it came out. Other than those, I probably didn't play it.

No Castlevania, no Metroid, no non-X Final Fantasy. I played like two levels of Doom and like a half level of Goldeneye to learn that I think FPS games are terrible, so none of those. Pretty much every "major title" completely passed me by.

I've never played Castlevania, Metroid, and Metal Gear Solid.

I was gonna say Zelda: Ocarina of Time, but then I realized I started playing it about several months ago and never finished it. There's also Quake and Doom that I never bothered to try since they both seem very boring to me.

I've played Metal Gear Solid, but I stopped after that because I don't like soap opera games. Didn't do silent hill b/c I'm not a horror person, and I didn't do Final Fantasy b/c I don't care for the systems in those games...I like to play my games rather than watch them. Some of you kinky bums like to watch more than you like to play...that's ok though.

You know, I didn't do Okami either. That was supposed to be a great game. I've played Halo with a friend, but I've not yet played any of the sequels. I've never played the original Devil May Cry on PS2, nor have I tried DMC2 or 3. I'm all into DMC 4 now though, and I might check the newest DMC at some point.

Oh yah, Castlevania Symphony of the Night. Zelda Wind Waker, Metroid Prime 2...ok that came out in 2004, but oh well.

There are a lot of games that I haven't played. Jak and Dexter. I could never tear myself away from the Ratchet and Clank series long enough to get into J&D.

10 years on November 3rd (for the US anyway). But you can fudge it because I fucking love that game and it's awesome :)

OT: Fire Emblem Geneology and Thracia 776. I have both of them, but damn they're hard.

I haven't played most of the Ninty classics including 3D Zelda / Mario (although I did test Galaxy through emulation for 5 mins) Although when I eventually buy a WiiU I'll rectify that.

Until 3 months ago I'd never played a COD game even though I do like the FPS genre as a whole. Playing MW2 only reconfirmed that I wasn't missing out on anything.

I'm not a console gamer so I haven't played any their classics.

On the PC, I've never played the Baldur's Gate or the Fallout games, and Planescape Torment

Final Fantasy VII - everyone raves about it but I just couldn't be arsed.
(I did enjoy FF VIII however)

Metroid - all I know is apparently people were shocked that the main character was a woman. Or something. Apparently a very whiny annoying woman too judging by the 3rd degree butt hurt. Perhaps the closest thing to Metroid I've played would be the old NES Kid Icarus. Which was AWESOME because you could get turned into an eggplant with legs.

Grim Fandango - I got over adventure games like this when I finished King's Quest VI and Legend of Kyrandia. Never went back. Oh - no, actually, Dreamweb. That was the last one I played.

Duke Nukem 3D - The only Duke Nukem I ever played was a side-scrolling platformer on a 386. Quite possibly in EGA colours.

I've never played a Pokemon RPG video game. I've played the N64 arena game, the card game, the board game, and even Pokemon versions of classic games like Monopoly, but never the RPGs.

My friend keeps nagging me for not playing Mafia. But I'm just not interested! It's sandbox and it's about 60s America, both things that I hate.

Also, I've skipped almost every console classic after PS1, except Persona 3 FES and Front Mission 4.

Let's see
Final Fantasy VII
Grim Fandango
System Shock 2
Morrowind
Chrono Trigger
Conquer's Bad Fur Day
Starcraft
Diablo 2
Silent Hill
Thief the Dark Ages

I just recently go into playing classics so I have something to do this summer.

I've never played a single second of any HALO game. Just not a fan of FPS's in general, so I never cared enough to play any of them.

Both the Mafia games are neither... The city is an illusion of a sandbox, it's more of a stage set for the missions (some of which are very good). And the first is set mainly in the 30s, the second is 40s-50s. So it is conceivable that you might like them more than you think...
