My favourite is Curse of Monkey Island. I have play that game quite a few time since I had loved that game so much.

Monkey island series.
All lucas arts adventure games were great.

Gabriel Knight 1 deserves a mention also.

Oh and Bladerunner is very special. It's an adventure game with tons of C&C, like taking some RPG and replacing the combat parts with light puzzles.

Broken Sword 1 & 2, Monkey Island series and Beneath a Steel Sky. Those are really the only ones I've played, but they're memorable. Out of those, my favourite would probably be Shadow of the Templars.

Quest for Glory is the best series from the 90's, being an awesome blend of RPG and Adventure game.

Is Grim Fandango available anywhere these days? I've always wanted to try it.

The Monkey Island games too (not the newer ones). Is the "special edition bundle" on Steam worth getting? It contains The Secret of Monkey Island: Special Edition and Monkey Island 2 Special Edition: LeChuck?s Revenge... which appear to be remakes.

I finished Day of the Tentacle a few days ago in just a couple of hours of clicking, using the vague memories of having played it when I was eight. Besides that, Sam & Max, Monkey Island, Myst, Riven, etc. Monkey Island 4 and Grim Fandango sort of count in that they're adventure games, I guess, but they're not point-and-click (they're full 3D WASD-controlled).

OH! Who else remembers Prisoner of Ice? Anyone? It was like Nazis and Cthulhu and things.

Well .. my favs .. hmmm ... That would be Curse of Monkey Island, Day of the Tentacle, Longest Journey and Dreamfall (Longest Journey 2).
