Ok, whenever I don't have any inspiration to cook, I ask colleagues what they ate last night, so maybe I can try some of those things.

But hey, unemployed, no colleagues.
So what did you guys eat last night (or recently)?
Preferably something you made yourself, and a short explanation of how, and what you do to make it unique.
PS: I don't do fast food.

I made a spinich dip in a loaf of sourdough.

2x 410g canned spinach, pressed until there's no water.
500g Ricotta cheese
250g sour cream
80g French onion soup mix powder

Knead with hands to ensure an even mixture.

Farts ensue.

Nothing. Most nights, I cook dinner, skip the actual eating stage and get back to whatever work I was doing. I tend to do that with both meals of the day quite often, actually.

Turkey taco with chickpeas (I love chick peas)

Ground turkey
1/3 of a can of chick peas
Onion
Taco sauce or whatever seasoning you prefer
Salsa
Tomato
Cheese

I mostly add the chick peas to make the meal bigger so that I can leftovers for an extra day.

I bought a microwaveable stuffed crust pizza and topped it with tons of pineapple. It was wonderful.

Home made alphabet soup.

Put some beef neck slices in a crock pot with a slice of onion and 4 cloves of garlic (whole), pour in one box of beef broth and a bottle of beer, toss in a tomato bullion cube and let it cook on high for six hours. Oh, add a bay leaf if you remember (I don't always).

Once the meat has fallen off the bones use a slotted spoon to pull all the solids out of the broth. Discard the bones, onion and garlic. Shred the meat and put back in the crock pot.

Add half a small bag of frozen mixed vegis and 2/3 cup of alphabet noodles. Cook on high for 20 - 60 minutes, until vegis and noodles are finished. (It depends on if your crock pot gets the soup to boiling temp, if it does not it will take longer to cook)

It was very good. I'm taking leftovers to work with me for lunch.

Home made burgers!

500g Beef Mince, 1/4 Onion, 3 Cloves of garlic, cumin powder to taste. Egg White or Cornflower

Chop the onion and garlic as fine as you can. Mix it all together then add the white or cornflower.

500g makes 4 big burgers.

You can cook them a number of ways. Grill or griddle pan is best. I fried them cos I have no griddle pan, if you fry them make them thinner.

You know the rest - ketchup, mustard, cheese etc!

It was probably bland mince product #432.

Least it came with Garlac bread.

I decided on a Friday that I would still have food for Friday. Then it was Saturday and I was like "OK, I just won't eat today, still got milk!". And Sunday comes afterwards. Shops all closed on Sunday. So my meal for 2 days was a lot of milk :(

Spicy Mince (yes, woo for unimaginative name):
SPICY MINCE (Serves 4)
1 tablespoon of olive oil
1 small pack of beef mince (or lamb)
1 onion chopped
1 clove of garlic crushed
1 apple chopped (no need to peel)
1 tin of chopped tomatoes
1 tablespoon of curry powder
1 tablespoon of pickle
Handful of frozen peas

-Brown mince in wok, fry until well browned.
-Drain off excess fat and oil and add chopped onion and crushed garlic. Stir fry until softened.
-Add tinned tomatoes and bring to simmering boil.
-Add chopped apple, curry powder, pickle and peas and bring back to boil.
-Turn down heat, cover and leave to simmer for 30 minutes.
-Serve with boiled rice, poppadoms, naan bread, pickles, etc

A can of Chunky Soup (chicken broccoli cheese w/ potato).
Plus some mixed veggies, as well as chips and salsa. Probably a little too much salsa, but whatever.
