The Elder Scrolls series has some pretty good ones... I like Sons of Skyrim a ridiculous amount lol.
Legend of Zelda games have had some pretty lovely tunes. Also, Jet Set Radio Future had an amazing soundtrack. There's something special about the sound of pirate radio. Kingdom hearts had nice music as well.
I don't think using Sonic Generations would be cheating, depending on what you pick. The "Classic Sonic" remix for Crisis City's music track was hands-down my favorite track in the entire game, and that was not only one of the worst levels in the otherwise great game itself, but also one of the most frustrating levels in the horribly broken Sonic '06.
Also, I agree with you on The Legend of Zelda and Metal Gear Solid. LoZ has a very iconic soundtrack that, while easily distinguishable at being "Zelda", always sounds different from game to game, and Metal Gear Solid is *insert mindless fanboy ranting about how amazing it is here.*
I also love Nobuo Uematsu's work with the Final Fantasy series.

There is absolutely no question in my mind, it has to be the Castlevania series, from the first game to Symphony of the Night, to Lament of Innocence, and even Lords of Shadow has a few very good tracks. I'd show each song worth listening to but it'd take too long.

As has been said, Legend of Zelda all the way. Never before has a game series' music been so finely ingrained in my mind that it has a little penthouse suite with a hot tub. Bastion also receives special mention just because it's so brilliant in so many ways...
They are a series of city-builders/economic management games/RTS lite. They've managed to retain relevance long past when their entire genre died, garnering 80-90% scores when their last true contemporary, the Settlers series, had faded into mediocrity.
Saga Frontier 2 (a truly unknown gem of the PS1) has some of the best music I have ever heard. When I first heard the in game music, I assumed they were classical pieces that had been transcribed into a more game-ish quality.
