Zelda music and anything by Frank Klapaki. He did Red Alert 1 and 2. And a few other games.
He did most of the Command and Conquer series music in actual fact. General had a great sound track

I like the Halo music...

Demon's Souls, as of right now.

It's just so pleasantly Gothic and unsettling.
And, since plenty of people took Yahtzee's word to heart and completely avoided this gem (Nothing wrong with that, just sayin') it will probably not get the recognition it deserves in the sound department.

It couldn't be anything other than Silent Hill. Pure fucking creepy beautiful genius.
This too.

Akira Yamaoka is, by every sense of the word, a masterful composer.

Really hard to say, because many games have great Soundtrack, even bad ones like Silver Surfer
Right now it's an tie between Bayonetta, Devil May Cry 3, Chrono Trigger and the Ace Attorney Series

Afro Samurai gets an honorable mention for actually having hip-hop that is good.

But my favorite is...

Pokemon
Have you played recent Pokemon games? Those soundtracks are fucking epic.
Screw the recent Pokemon games! 1st generation's where it's at!
second generation my good men was the best. best pokemon best music, best evryhting.

my favorite soundtrack is, sadly, Kingdom Hearts 2, i found many of the songs helped me immerse in the game.

System Shock. Purely for the comedy value of having "The Girl from Ipanema" play whenever you get into an elevator.

Fallout 3, not what I normally listen to, but it opened up a whole new genre for me.
