I know I've probably made this exact same reply in similar thread in the past few years, but I still feel very strong about this opinion:

Fallout 2 (Fallout 3 was the most disappointing sequel in history.)

Dungeons. It's effectively an up to date DK under a slightly different name.
It's also available on GamersGate for those of you who don't like Steam.

I'd say Morrowind, but there's heaps of people who think that already.

I'll go with Future Cop L.A.P.D. Freaking awesome fun game back on PS1.

I'd give anything for a full HD remake of this game. In HD!!

Not necessarily an update but I really, really wish Creative Assembly would release a map editor for Napoleon: Total War. The mods would be so much more awesome with just that one tool, it will never happen though.

EDIT: Totally misunderstood the title OP, forgive me. I was thinking something like Steam updates. :/

I would love a remake of or sequel to Freelancer on the PS3 or Xbox 360. I could spend hours on that game.

Glad to know I've got your support :p

Master of Magic. Despite its flaws, it was a great game that few modern turn-based strategy games can beat. Obviously a graphics update is in order, as well as some balance problems and such.
Also, Crusader Kings: great idea, poor execution. Update the UI and add more to the politics and you're golden. While the original had fairly complex politics, there wasn't much you could DO with it once you explored the obvious routes.

Crimson Skies. Remember Crimson Skies? The airplane combat sim set in an alternate 1930,s time line where America divided into several independent nations and everyone flies planes? Where was it's sequel? The possibilities for this game were endless.
While I would love more Crimson Skies games, it had a sequel. It's also a tie in to a miniatures game that was created by a company that no longer exists. But that never seemed to stop Mech Warrior.

Yeah High Road to Revenge that was the one I was talking about. Unless there was another one I missed.

Fallout 2.

Give it better gameplay and updated graphics and release it now.

Then maybe people will start realising what was so wrong about Fallout 3.

X-Wing/TIE Fighter. They need to update that game, or release it on Steam/GOG for new systems. It was so much fun. I mean the Starfighter games were good, but I love the X-Wing style more like a sim. I love being able to customise power flow or shield set up on the fly.

FallOut 2.

No seriously, it was one of the best games in the history of gaming, although it had a few bugs.
I would seriously pay money to have an official re-release with updated things.
Not a remake or whatever, the original game.

FallOut 2
There is a fan patch of the game that supposedly adds in stuff that was cut out.
