Halo 1, co-op, legendary, sure, it took the patented 'pile in and eventually leave so many copies of your own bodies that you can use it as a wall, then run back to bring your partner back to life' strategy (snappy name, I know). But it was so bloody hardocre that it felt like a real achievement to beat it.

Pokemon Red when I was around 6, Pokemon Gold right after that, God of War I & II, Jak and Daxter: The Precursor Legacy, the newest Prince of Persia (although I will buy the epilogue on PSN this week.), Baldur's Gate: Dark Alliance II on the PS2 (loooong credits, I felt accomplishment when I'd endured through the entire credits).
I can't come up with any more games, but there's probably some more, since I had ~40 games to my PS2.

Any Final Fantasy game gives that feeling of accomplishment, however I remember with FFX I'd gotten all the Seven Days weapons and completed everything, And by the time I went to beat the game, I hit the boss like.. 3 times, and it died.

I've found it hard to even beat games because I'd rather they never end. well, at least with the ones that I've enjoyed more fully. But then I get distracted by another game or something and stop playing. I guess I should go through and beat some of my older games.

One satisfaction wasn't necessarily a completion of the game itself, but Beating Yiazmat on Final Fantasy XII was pretty damned impressive. I felt pretty proud for pulling that off, even if I did have the strategy guide telling me the right combo of equipment and settings to use.

Recently, Demon's Souls, not only because of the brutal challenge but mainly because of its beautiful design and memorable moments.

From ye olde times, Black Dahlia, an adventure game from hell. With no internet of course, took me 6 months to beat its insane puzzles but the story was pretty awesome.

Completing The Elder Scrolls III: Morrowind is one of proudest gaming achievements. So may people got lost in that game and never finished it...

Final Fantasy VII was definitely the most satisfying beat for me. I devoted so many hours of my life to it and was invested in the story and characters, but man was it a hard slog to keep racing chocobos until I got the golden one! But, I leveled up all my materia and beat all the weapons, and was just thoroughly satisfied with FFVII.

An "Honorable Mention" has to go out to Legend of Zelda: Link to the Past just because I gave up on it when I was a kid, but went back and played it a few years ago and beat it in a day! I was perhaps a little too thrilled to have finally closed that chapter of my life.

Zelda: Ocarina of Time & Prototype.
Mother of god was the end-boss mindfuck on PC when the targetting system decided to lock on to everything else but the boss.

getting all the original achievements in Mass Effect was pretty awesome.. much more awesome then getting them all in Assassin's Creed.

Also, beating FFVII in one sitting with a friend of mine (it was an extremely long sitting - 20-24 hours), and getting everything in FFX, including maxing almost all of my stats on all characters.

Mount&Blade. I did more than invade a castle or two, or even an entire region - I conquered the entire damn world and unified it under my banner. Good feeling, that.

Anything when I was under the age of 12. Then I got good at games and now I can beat them in a couple of days.

Diablo 2 expansion with my brother and Final Fantasy 8, there's something so gratifying about finishing a game that you've invested so much time into, somehow I don't get that with most games nowadays.

Every Crash Bandicoot from the 1st to Crash Bash on 100%. Oh and Burnout 3 Takedown 100%. Still play all of these though.

Also, Fallout 3 has satisfied me a hell of a lot. And still haven't finished the expansions. When I finish it, I am gonna start a new one. This game satisfies your every fiber. MMMMMMMM.
