I'm a fan of the classics. Something like the Henry Repeating Rifle ("Lincoln's Repeater" from Fallout 3) would be a genuine pleasure with which to kill people.
(edit: Of course the Lincoln's Repeater from FO3, to work with an actual Henry stock, would have to modify and reinforce the shit out of the barrel if it's firing something with the stopping power of a Magnum round rather than the underpowered black-powder-cartridge in Henry's 19th-century day.)
