Me it would be Fighting an Giant (like in shadow of an Colossus) with gun and Sword and Such

I'm not really bothered.
I usually prefer it when the enemy has intelligence and doesn't just attack in patterns, though sometimes that can be fun.
The exception of course is zombies and weird brainless monsters, who can be awesome to fight, but only when theres a horde and they're slowly all closing in. That's pretty sweet.

The combat in the Kingdom Hearts series could be repetitive at times but I maintain that it was totally sweet, I never really got the impression that the enemies were easily beaten at any time because although often they weren't too hard to actually kill, they always seem to act with some sort of intelligence. The worst sort of enemies are those that get stuck in door frames or against corners and stuff like that, it just totally ruins the atmosphere, although it can be a lol sometimes.

I also enjoy turn based games, because its all about strategy, spotting weaknesses being able to tell when you need to prepare for that killer move that most bosses have, thats when attacking in patterns can be cool.

I think the best is PvP, because so much more interesting stuff can happen when your opponent really is the same as you and isn't running off an AI script.

Of course I was being sarcastic. Are these people serious? Maybe it was fun for the first 2000 games that had you fighting Nazis, but it's getting a little old.

Seriously, though, I've always liked bosses that spawn minions. I have no idea why; maybe it makes the battle more strategic, or maybe I have ADD and it distracts me temporarily.

Yeah, Dark Link was great to fight. Most bosses involved stunning them then hitting them when they were down and Dark Link was an excellent change. The place were you fight him was really cool, it was like you were walking on an infinite lake with a tree in the middle. The fist time i fought him, i beat him with just a quarter of a heart container left, and no milk, potions, or fairies.

I love using my minions in Overlord to kill the stupid Harflings (Halflings). But basically laying waste to anything in Overlord with overwhemling force is fun. Trashing villages never seems to get old.

Any enemy that's smarter than the main character and tolerates their infantile attempts to accomplish their goals only because they have better things to do than blow them to ashes.

Or if you mean a particular enemy type

Any enemy who has all the same powers as the main character and uses them intelligently. A battle of pure skill as opposed to overcoming or abusing advantages.

Anything that comes at me in huge swarms but that I can mow down easily, so think Left4Dead zombies

I relish any fight where I am vastly outnumbered and/or seemingly outgunned, I like a challenge.

Also big bosses are always fun to take down a peg or two especially if they're cocky and over confident.

Something the size and speed of a semi. Such as the Hunters/Ant Lion Queens from Half-Life 2 or the one tiger colossus from Shadow of the Colossus. Incidentally everyone else seems to hate them but I love the frantic running and desperation that comes with them.

I have fond memories of retreating to the cliffs after a proper mauling in Shadow of the Colossus as my foe just skulked around the pond staring me down with murder in its eyes.

Something that requires you to actually think further than 'sharp thing goes in squishy thing', like those darknuts from the Legend of Zelda. Or a huge lot of lil' buggers that are only strong because of their numbers, like those multi-man brawls from Smash Bros. High difficulty would be very nice too, as long as they don't do it just with lots of HP, or something like that.
