Okay, well I can't pick just one. That'd just be cruel. Is top 3 (in no particular order) cool?

1: Dark Souls. Yes it can be dreary, yes it's frightening, yes it makes you paranoid about everything, but it's so pretty and majestic at times, that the melancholy that pervades the environment itself (before you even get into the characters and backstory) is downright touching. Honestly, the world of Dark Soul feels so much like it's dying of a thousand agonizing wounds, I feel like I'm watching a beloved character get shot at a few key moments. It's rare, and the terror or feeling of triumph that the game inspires tends to replace this feeling, but I'd say that it's the most effective use of atmosphere that I've seen in a game.

2: Planescape: Torment. That the writing of the game was downright superb helps, but I think all the little things that make up the world of Sigil is what really sells it. The Hive was actually alive, which is more than I can say of anywhere I've seen in Assassin's Creed, Prototype, or GTA. And the whole thing with belief changing the world, the presence of portals and their effect on the city, and the fact that ideas actually are more powerful than anything physical in the Planes is just fucking awesome. Basically, 'twas a bloody good game, an' any yoo eedjits who missed it should get yer arse and coppers down to GOG an' pick it up!

(Note, Mod it first. There's a fan patch that restores a lot of content and fixed a lot of bugs. It is an Obsidian game after all)

3: The Void: Seriously, I had no idea what the fuck was going on in that game, and haven't come close to beating it so I still don't. Despite this it was pretty, unique, dark, super atmospheric, and just totally the bee's knees. Also, hot mostly nude chicks were like, the only people you could interact with, so that's a plus.

Honorable mentions: Skyrim/Morrowind (Fuck Cyrodill though. So boring outside the Aeleyid ruins) Mass Effect, Fallout, Jet Set Radio, and the world of Alan Wake.

Definitely Lordran and Dunwall. They just feel authentic to me in ways most other game worlds do not. Both have character and culture that makes these places believable. Mostly b/c in both Dark Souls and Dishonered the devs have put so much attention to detail in creating these places and they play an active part in both games. So they are more than just a setting and that is what makes them really interesting.

Seriously. I think it subscribes to multi-verse/infinite universe theories, which means that, if it's physically possible, it exists in the Myst world.

The stuff that we're actually shown is pretty mind-blowing, too. The first game alone gave us a forest growing out of a massive lake strung with treehouses, a ship that suffered a materialization accident with a rock and a bizarre caldera in the middle of the ocean with assorted signs of civilization scattered over it, and by the time they got to game four, the level designs just got ludicrously good.
Nice answer. I'd say this as well. Second place goes to Elder Scrolls. But it gets points off though for just being a such a DANGEROUS world to live in. Not just dangerous to the body but to the SOUL as well. That's just unacceptable to me in terms of realistically living there.

I'd also say Pokemon but that answer's been so overdone I hardly even think it needs mentioning.

Zelda would be kinda cool too, though it's dangerous there as well. However much less so than Elder Scrolls. But Elder Scrolls has the potential for the most fun...

Mass effect after the whole reaper thing, for me. I've always been into astronomy. I can only imagine how it would be to actually be able to visit other planets, see nebula's up close, meet alien races, etc.

the american wasteland that is the Fallout universe. i just love how creative some of the societies are and all the comedic Easter eggs fit together so well. also, i want to give special credit to the guy/girl who designed megaton. that architecture and design choices of that place still makes my brain squee

Can't believe that nobody has said it yet, but playing World of Warcraft in Wrath of the Lich King...boy that sucked me in. I used to just fly round Northrend because it was so beautiful and I loved the music so much. The questing, the Titans...the whole theme, everything was perfect for me then. Escaping from the difficulties of my life at the time into WoW, into Wrath, was everything I needed. The Ulduar zone and raid was my favourite of all time and the fact that the game moved on to Cataclysm actually saddened me as I didn't want to leave Northrend.

However, some of the new zones in the later expansion packs brought that feeling of wonder and amazement that I haven't really got from another game. I miss WoW for the world, rather than the gameplay. Heck, I still want to go back.

Certainly the different variations of the SMT world, whether it's the Persona version or Devil Summoner... or any other version. Persona must be my favourite purely down to the idea of fighting as who you really are inside, I love how accepting everything about who you are including the darker aspects you don't want to acknowledge give you power. The entire concept of that universe seems to be based around accepting who you really are and I love it.

Dishonoured, I really fell for that one. I think I have something wrong with me. I just love the art style and the little details. Probably helps I really liked the story as well. It's sad but in dishonoured I feel I'm on/in an adventure of some sorts. I couldn't wait to explore the dlc when it came around.

Well the obvious answer would be Pokemon. All the different regions and sites and cities and towns, and since all the regions technically exist in the same world, you could travel just about anywhere.

But to give a few runner ups, I really love Fa'Diel from Legend of Mana. It seems like such a beautiful and varied world that I would not mind being in. Ask me which city in that game I'd like to live in. I couldn't tell you, because they all seem so amazing.

And if I were a tiny octopus, I'd like to live in the Squids world. They have the seven different kingdoms, each representative of cultures from around the world, made up of things from the above world that fell into the sea. So far we've seen the Hawaiian, Greek, Western, and soon Eastern societies.

It's a tough call.

It felt like a living breathing world with tons going on in it... also it had all those airships and magitech gadgetry... yeah... I loved it...

But this is a case where I actually love the world more than the game itself.

On top of that, the environments are beautiful. Pokemon live with us in a mutual relationship. And our competitions rely on battles which 99% of the pokemon usually agree to.

It mixes between military style and fantasy.

I'm not sure that'd sell me on it. Part of what I liked about Lordran is that it's not entirely grimdark, the way Boletaria sounds. It's disturbing and full of evil and sad stories, but there's a hope for the future no matter what the Chosen Undead does due to ambiguous nature of the story, and the fact that while things blow, the world isn't dead. Yet. Also, I looked at OP's question partially from a game mechanics standpoint, and from what I hear of Demons Souls gameplay, Hub based world with zones you fight through vs. the vast expanse that is Dark Souls? I'll go with the latter. BUT, I certainly will pick up Demons Souls, once I'm not broke from paying for this upcoming quarter. And yeah, I wouldn't want to live in Lordran. Well, maybe being at the beginning of the 1st Age of Fire would be pretty fucking sweet. Either way, FUCK YES DARK SOULS 2!

For me the choice is easy: Mass Effect. It's a beautifully designed and varied sci-fi fair with tons of cool back story.
