Second chance.

A box where if you fall into lava, your items will be with you in spawn
But it should cost like 9 diamonds or something...

Mummies in the desert biomes (Basically a zombie, but resistant to fire).

A form of light (Maybe, a flashlight, or a headlight, or a torch you can stick on your minecart). You'd hold it in your left hand (You'd equip it in the character screen, I guess).
Well, the idea's ill-faded, but it's better than having to place torches every 5 steps.
PS : These. Ideas. Are. AWESOME.

A lava resistent suit would be nice. Mining for obsidion can be very frustrating when you break through and fall right into lava. Such equipment would also be essential for any nether expidition. A map would also be a good feature. Getting lost in the nether can be very frustrating. It's very dark in there.

Easier to obtain metal blocks. Wood and stone are good building materials, but a real fortress deserves massive steel or copper walls. Iron has practical uses, but making iron blocks to build with takes an unholy amount of mining.

Something that would introduce building some kind of flying fortress or helicopter....

That in small quantities it would be able to let the player fly a small portion of land, or in huge quantities it would be able to fly large chunks of land across the world...

Some kind of oil or somehting.... that would be added in somekind of furnace xD

It isn't an item, but Single Player Commands. You can play it normally if you want, but I want to build stuff with items that are hard to find without a griever burning my shit.
If I had to choose an item, something that makes water/lava flow further than the 7 blocks.

Otherwise, maybe steam powered stuff, you know? like a stove that boils the water and you then connect piping to various implements...
imagine piping with steam to turn cogs to create motion. very simple stuff to create i imagine :p that way you can convert the electrical power of levers and buttons into real drawbridges and stuff. only my imgination

A flare - basically a torch stuck to your head so light can follow you.

A fire arm - like a pistol or something, create it using diamonds and redstone, then get gunpowder and two iron for every four rounds.

i will say this again and again, Quicksand, it would be great for mob traps and or secret entrances.
It has this :p It's called soulsand and it slows down anything a ton.

Actually you would think iron blocks were better but they have the same blast resistance as stone :/

If you want blast resistant ore your looking for obsidian.

There's a mod called death chest that places as many of your items as possible in a chest in your inv if you happen to have one when you die, this would be useful as chests don't burn.

Notch was supposed to add lanterns a couple updates ago, hopefully he will do it soon!

I want to see various resources that only show up in certain parts of the world. Special dyes, extra-strong ores, gemstones, different kinds of flowers/mushrooms... just anything to differentiate areas. Let this go beyond even biomes, and thereby establish a reason for trading and conquest in multiplayer.

Alternately/additionally, let players learn advanced crafting techniques. Things like Damascus Steel production, or fancy stonework, or wood carving. Let one player learn how to make picks with double the normal cutting speed, or doubled durability, and Minecraft's multiplayer will increase greatly in depth.
I like both these ideas. Different biomes just need to be more exciting. I've committed myself to sprucing up all my maps with as interesting biomes as I can make, but there still need to be more flora and fauna varieties, and probably even more biome varieties, so there can be a smoother transition between biomes, and a more interesting selection. Needless to say, the way that biomes border each other and the size of them needs to be improved.

Crafting in general should be kinda revamped. I think the player should require several different types of crafting benches if they want to build everything that the game has to offer, such as regular crafting tables, masonry tables for stone stuff, and anvils for metal stuff (at the least.) I think that you could add a lot of creativity and interest to the game with that kind of idea, requiring different apparati to make different items, tools and materials. I'd think that that's the kind of thing that Notch/Mojang could add almost fully in a week or two, but so far we've been getting mediocre updates, which I'm kind of dismayed by.

As for items and blocks, I'd like to see a wider selection of stones to work with. Sandstone was a great start, now I'd like to see limestone and marble, igneous rocks, and maybe a more realistic/better organized geology and topography to the map. Huge mountains and vast plains may be required, and it goes without saying that mountains should function like lower levels of the map in terms of material abundance. Also, more ores would be good, at least copper and tin so we can make bronze.

I'd also like the ability to build terra cotta roof tiles, and with that, clay should be a bit more abundant yet again. Thatched rooves made out of wheat would also be cool.

Floodgates. They're doors that allow water/lava to go through them.

I'd love to see some sort of water control system, like floodgates. Or anything else that makes redstone more useful and awesome.

Water gates, so many possibilities.

I'd like what everybody has already said in terms of gates and blocks which affect other blocks.

Specifically trapdoors/drawbridges/winch+rope+counterweight mechanisms/water and lava gates.

Sluice gates would be really awesome.
To everyone I just quoted:

Mojang is planning to add pistons to the game, and you can use them as water gates. It was originally a mod, so there are already videos of them like this one:

You can use yellow dyed wool...
I could, but wool isn't fireproof and blast resistant, and doesn't look like brick. Wool blocks look like colored dirt, which is fine, but not when I want a specific texture.

I could use wood planks, I suppose (still not fireproof, meh)... but that doesn't help me make dark, blue, orange, or multicolor bricks... Come to think of it, I want to be able to paint or make painted wood as well...

I guess what I'm saying is, I want more colors! (without having to load or make a mod).

A way to detect if a place is lit enough so that mobs won't spawn (people on the minecraft forums said it was stupid and useless, but it is a lot less stupid and more useful than the compass and watch).

Elevators, since he broke water ladders. Really, it can't be that hard to make. Just do a sort of combination between ladders and mine cart tracks, then make an elevators with coal in it (for power like the powered mine carts) that has up/down options and stops at certain pieces of the elevator rails like how minecarts stop on unpowered booster rails (or whatever they are called).

And something my friend and I were talking about in class, some sort of catcher, like a reverse dispenser, that you could wire to a chest and if items fell on top of it, they would be stored in it or the chest you wired to it.
