Sign language, braille, morse code, binary are on the top of my list.
But if these don't count:
Japanese and Latin. That is it.

I'm hesitating between Russian and Japanese. I guess the choice will boil down to what schedule suits me when I pick my classes for next year.

I'd like to know Tagalog. My family on my mother's side is Filipino, and they always speak it. I would be nice to understand what they are saying.

Well I want to finish learning Japanese, I already speak a pretty good amount, but I'm not fluent due to just being lazy. Other than that though I think learning Russian would be pretty cool.

I really want to learn German, mostly because every voice actor I've ever heard sounds like the most badass guy EVER when they speak it and I really like how it sounds.
I've heard that German doesn't have so many exceptions to its grammar rules, so unlike English, it's not as much of a ***** to learn.
And it MIGHT have something to do with Rammstein.

German
Japanese
Russian
Latin
Greek

I almost have the first down, and am currently learning the second two with help from Rosetta Stone...
The last two, my knowledge of them is limited to what I've found in books.

First year of Japanese currently.
If I could instantly learn a language and be fluent with it, I'd like to learn Latin and sign language.

Why?
Japanese because I like the culture, and would like to watch un-subbed anime, and read real manga.
Latin because so many other languages are based off of it, and its a very interesting language.
Sign language so I can talk to people who cannot speak.

I'd like to instantly learn Latin and sign language because Japanese is hard enough as it is already, and don't feel like going through this kind of frustration a second and third time =/
