the UFO series and anything by Black Isle. The infinity engine games are, to me, some of the most aestheticly well done games ever. Especially Baldur's Gate 2 and Icewind Dale 2.

Just about everything in the 8-bit and 16-bit era that was great then is still great now. It's after that where things get a little iffy. For the 32/64 bit era, I'd say most of the 1st party Nintendo games and a few of the Rareware games still look and play great for the N64 - granted, I haven't played Goldeneye in a few good years now, but I don't play a hell of a lot of modern FPS so it probably won't feel quite as dated. Spyro games on the PS1 are still good.

On PC, Age of Empires 2 is still a lot of fun, definitely aged better than the first - though I still prefer Age of Mythology to both of them (speaking of games that have aged well).

alpha centauri, because the mouse controls work well you are not weighted down by clunky keyboard controls, the graphics are still pretty 2d and the gameplay is like good wine.

Guild Wars, some of the Ratchet and Clank titles, WoW (As in, before Cata upped the graphics), Warcraft 3 (Surprisingly) aaaaaaaaaaan- wait, we're not talking about the look of it? ... Well, I value my fingers then.

Phantasy Star Online.

Maybe I'm blinded by nostalgia, but no matter what, this is a game I can always come back to. PSU was a joke compared to PSO.
Nah, its not just you.

If they announced PSO version 3 id forget all about Skyrim and ME3.

Nothing was better then playing it on the dreamcast with my mom! :D Its was just the perfect marriage of Hack and slash, grinding for good items, and RPG.

Max Payne 1&2, Silent Hill series, Beyond Good and Evil, Half Life, Doom 1&2, Quake 1-3, Duke Nukem 3D, Thief 1 and 2, Serious Sam, Pathologic, etc.

My favorites? Silent Hill, Pathologic and Thief.

EDIT: Oh, and System Shock 2.

Deus Ex ---> The first one, not the second >_>'
I'll have to disagree.
I, too, think Deus Ex is one of the best games ever made, but it has definitely not aged well.
It's the fact that we know it's so awesome that we can overlook its obvious age and flaws.
Anyone not yet inductance to its glory would be immediately put off by its aged look and feel.

Baldurs Gate 2 has hand-drawn environments and was released with support for 2048x1536 resolution.
That's pretty kick-ass for a game that was released in 2000 IMO.

Neverhood, Psychonauts, Pokemon (gameboy color), Oddworld: Abe's Odyssey, Final Fantasy 1,7,9. Diablo 2, yes, the only game where i've developed finger strength by clicking an insane amount to kill and break a mouse clicker. Monster Hunter, Frogger, rayman 2 the great escape, star wars pod racer (n64), Mario Kart, Diddy Kong racing, Zoo tycoon, pretty much any horror game genre (the low graphics hides the monsters well.)

As what I imagine a good few have probably said already, the Kingdom Hearts games have done a pretty good job age wise. The games are crawling on to their ten year anniversary and they still look pretty good. I think the saving grace for that game is that they went for a more stylized feel to it. Sort of a simplistic cartoony look to it rather than going for photorealism. Which helps when it comes to aging.

The combat is also pretty slick and works well. I've been playing the games the other day believe it or not and it still feels mostly tight, the graphics still look great so yeah its aged well. Though the camera is still a pain in the arse.

I hear they're making a 3rd in the near future and I can't wait to see what that will look like on the PS3.

Master of Orion 2
Jagged Alliance 2

Still the absolute best games of their respective genres.
On the gfxwhoring side, 2D visuals at 640x480x8bit generally still look alright, so they got that too.

The first 2 Doom games as they still have a small active mapping community aswell as skulltag multiplayer engine.

A Link to the Past.

The depth of that game despite the primitive graphics and game concepts is still amazing to me.

Also, the gameplay of Lunar: Silver Star Story is still pretty great. The story and characters definitely feel pretty dated though.

Super Mario RPG, Chrono Trigger and Suikoden. What can I say? I love me some old school RPGs.

Final Fantasy IX hasn't aged in graphics which for a PS1 game is astonishing. The cutscenes look like they'd be good these days.

Planescape: Torment

I played the game for the first time recently (I had only just started playing JRPGs in the late 90's, and wasn't quite ready for WRPGs yet) and found it to pretty much the best "old" RPG I've played so far. The GUI is a bit clunky at times, but as soon as I got used to that the game felt fantastic.

Super Metroid has aged to perfection. I played it for the first time this spring, and would easily put it up against the best modern games.
I have one (big) problem with Super Metroid.

Or maybe I should say I have a problem with Metroid Fusion and Metroid: Zero Mission. Playing those two games has made me accustomed to the R-trigger missile mechanic, and I just can't go back to hitting Select to switch between weapon types. It's clunky and annoying.

That said, the areas and all other gameplay mechanics are pretty fantastic. I love Super Metroid, but wish they'd release a new version of the game with revamped controls. EDIT: And the music is <3.
