A Silent, Sneaky Assassin type class.
With some Invisibility powers.

Oh and I'm evil.
With some necromancer powers to summon my own minions, while i hide in the shadows.
What would you do if the zombies find their prey by smell?
Then you prestige class into ghost walker and shadow walk/ethereal jaunt your way between safe zones until you reach level 8, at which point you can spend 8 hours per day in shadow walk three times a day and save yourself completely, though it would be very boring.

OT: Warlock, Mage/Necromancer is a decent option until you realise that you'll run out of spells eventually. Warlocks can just blast of AoEs teleportation, invisibility, spider climb etc. all day long.

Necromancer. Why fear them when you can bend them to your will and control the world from then on?
Because you'll run out of spells eventually, your zombie guards will be killed, and other people will hunt down the person that they're convinced is the source of the zombie crisis.

This is assuming that these are actually considered undead and not just 'infected humans'

It's all there in the title, but I'll clarify.
Imagine a world where RPG tropes are true and part of the world, or alternatively, a world where you're granted 10 levels give or take in a "standard" rpg class.
The zombie apocalypse has broken out and you're one of the few in your area that has survived the initial breakout. What class would you most like to be of in that situation (in a modern-day setting).

Personally, I would be a cleric (The D&D 3.5 kind), because of the ability to turn undead and heal etc. Or a (D&D 3.5)druid because of their spell library and ability to turn into animals.
Don't overlook the remove disease spell, it removes all diseases, even those that would otherwise be incurable (i.e.: zombie virus)

If we go by the D&D i would probably say ranger. The forest is pretty clear of zombies. You can scavenge for food. Make primitive shelter. And in most cases zombies cannot climb in trees. Have an eagle for scouting the area before moving on.

Or if this aint serious im gonna be the source of it all. A giantbrained alien controlling a megarobot dedicating my life to make humans into zombie in order to eliminate my nemesis. The plant.

I'd have to go White Mage/Healer who else actually knows how to "Cure"
being Zombified or being dead in general.

Going by Fire Emblem Classes either a Berserker, Swordmaster, or a Assassin.
All three really swift and powerful.
Being fast and able to take care of yourself is good in a Zombie Apocalypse.

Warrior. I'm sorry, but Zombies vs full plate armour? Errr... yeah, they can claw and bite all they like but I would probably be able to pretty much take a nap in the middle of a fight if I felt like it.

Edit: Make that Paladin, full plate + anti zombie aura. It's not really fair at all on the poor blighters.

Probably a cleric/priest-type character--since revive always kills zombie and healing your own comrades would be great. :D I'm too cowardly to be a badass barbarian or knight or whatever.

Bard/Rogue Here Hehehe!

"Zombie! ZOMG! Let's talk! Uh, no? Okay then i'm going to walk this way behind this fence and you come after me, okay? Sweet! Ow! That's my finger! Psych! It was yours! Not funny, Mr. Zombie? Pshh. Fine, I didn't like you anyways! But thanks for your shoes!" (^0^)/

That'll be me, you can see my class right there in that quote! :B

Wizard from D&D 3.5. Don't need to be high level to start doing AoE, polymorph to a flier/swimmer or just levitate. And, of course, sleep inside a Rope Trick 30ft. in the air.

I would be the one leading the camp and making trades with other survivor camps.

Either a Jedi Weapons Master or Jedi Watchman from Kotor 2. Force powers that can do everything from healing to stunning enemies to armor and more, my needs are covered. :)
Plus precognition! :D
And proficiency in melee! :D
And the fact that I'd be a Jedi! :D

Can I be an awesome ninja-mage thingy: dancing between the feeble attacks of my zombie enemies, slicing off body parts with graceful precision, teleporting out of danger at the last moment, launching an entire horde of zombies off a cliff with a magically-enhanced wrist-flick? What's not to love?

But seeing as that isn't allowed, I'd go with arcane warrior from DA:O, nothing says "Screw you!" like having so many buffs that you never get hit and having every hit you deal being re-inforced by raw magical power.

Necromancer?

I'd raise my own army of the dead to rage an epic campaign against the legions of of dead, eventually taking my place as ruler of the new world once I'd eliminated the threat of the other undead.

Paladin, 4e, who is equipment with a holy avenger blade, also a crossbow, a holy one that has an underslug arrow-barrel, now that'd be badarse, would it not?

IDK who I would devoit to, though.
Why a holy avenger? Aren't zombies neutral? They're even less intelligent than animals (which are classified as neutral due to not being intelligent enough to have an alignment), so there's the holy advantage gone, cold iron is no more useful against zombies that ordinary steel, and the primary reason for using a holy avenger is the spell resistance and dispel magic are both similarly useless.
