Oh! this is jolly good then! I got my girlfriend this year a necklace. We had been friends for a while and we went out and then she broke up with me a while later in favor of being "just friends" again. So now I have a $50 dollar necklace sitting in a drawer. Could have bought a game for that money...
You're going to have to tell us a bit more about the woman in question before anybody can really give you a sensible answer.
What does she like? Music? If so, what kind? (itunes giftcard, perhaps?)
Movies? Which type? Get her a DVD of a movie you know she loves, but doesn't yet have.
Books? Same story.
She might like being taken out on the town. You know her to some extent, hopefully, so your the best judge of whether she's more 'taken toa fancy italian place' or 'get some bad chinese takeout and watch a movie at home'.

I don't have much for Christmas stories, and the obvious advice has been given, but I will relate one thing I got for my girlfriend's birthday a couple years back.
I bought her a box of EPT pregnancy tests, all of which came back positive.
