I would love a game with the crunchy filling of Steel Panthers: MBT, coated in the sweet graphics and destructible environment of Company of Heroes or World in Conflict, and sprinkled with option for the "we go"-style turn-based gameplay of the Combat Mission series.
If it's an FPS, everyone knows that the perfect game is called "Blow Stuff Up" and gives the player a fully destructible, fully physics'd environment and every conceivable weapon, from stone knives to thermonuclear weapons, to use on it.
Lastly, I want a game that recreates the nuclear war simulations seen in the last few minutes of WarGames. Defcon came close graphically, and Bravo Romeo Delta came close in realism. I want the two to meet and make frantic, shuddering love. I suspect this game exists, in some form or other, on a forgotten stack of 5.25-inch floppies in a locked filing cabinet in a disused lavatory with a sign on the door saying "Beware the Leopard" in some basement of the Pentagon.
