I would be a huge, buff muscle builder. Lifting weights, shouting, being the very image of masculinity.

It would be a fairy type gym.

Fun answer: A team of all Zorua and Zoroark, I would be the doppelganger gym leader who uses all the same Pokemon you do (or so you think).
But Zorua and Zoroark mimic your own team mates so they'd just be mimicing each other :p You'd need Dittos to mimic the other teams Pokemon. That would be interesting for a "normal" type gym - just 6 high leveled dittos :D Fast fighting-types could probably make mince-meat of them though...

OT: I'd probably have a Fire-type gym - fire has always been my favourite :) It'd be #6 of the 8. Team includes;

Vulpix Lv 40 (Sunny Day, Will-o-Wisp, Flame Burst, Confuse Ray)
Charmeleon Lv 40 (Fire Fang, Dragon Rage, Flame Burst, Brick Break)
Arcanine Lv 42 (Roar, Extreme Speed, Thunder Fang, Flamethrower)
Darmanitan Lv 43 (Hammer Arm, Fire Punch, Incinerate, Solar Beam)
Chandelure Lv 45 (Curse, Inferno, Shadow Ball, Overheat)

TM for winning would be Flame Burst.

Rematch team has all the originals except Vulpix is now Ninetails and Charmeleon is now Charizard, everyone is level 60 and there is now a level 60 Houndoom.

I have always had a special weakness for water Pokemon, and my team would consist of:

Blastoise
Feraligatr
Gyrados
Vaporeon
Starmie
Lapras

My gym would have to have whirlpools and waterfalls all over it as well. Can't make it too easy for challengers to get to me can we?

I'd be a ground type gym leader, probably the 3rd one so the team is relatively small.

Krokorok (with Intimidate)
Vibrava
Camerupt

I love Camerupt, so there. Gym would be...I don't know, a mountain side with multiple paths and areas where you need to slide down the mud to proceed.

Rematch team would be

Hippowdon
Krookodile (again, Intimidate)
Flygon
Swampert
Gliscor
Camerupt

And yeah Camerupt as the highest level one would seem out of place on a team of competent stuff like that, sue me, it's my favourite :)

If I would have to choose one type for my gym, I would have to go with a ground type set up.

First is a Krokorok Lv. 36 with the attacks: Mud Slap, Crunch, Swagger, and Dig.

Next up would be Gliscor Lv. 38 with the attacks: Poison Jab, Acrobatics, Night Slash, and Thunder Fang (for a surprise for any water types).

The third member of my team would then be Golett Lv. 37 with the attacks: Mud Slap, Shadow Punch, Iron Defense, and Magnitude.

The last little guy for my team is and always will be my favorite pokemon, Cubone Lv. 40, with the attacks: Bonemerang, Bone Rush, Thrash, and Bulldoze. Mostly ground type moves but it will have surprisingly high stats.

Heck, with a team like mine, stuff with bit of darker themes for ground type, I could have my gym in a town with a large graveyard or an archaeological dig site near by. So I would be quite content with my set up.

Edit: Forgot to set up my gym itself. Since I already mentioned an archaeological dig let's go with that. Each room would have a certain amount of pillars, each with a lever. When you choose one the pillar moves, either leading to the next room or a trainer to fight. No clues about which one to advance though, so it will all be about luck (or going online and reading a walkthrough, you cheater).

Rock-type. Sort of. You say Rock-type, I say Dinosaur-type.

Aurorus
Tyrantrum
Kabutops
(Mega)Aerodactyl
Rampardos
Bastiodon

Might switch out the Bastiodon if the next generation gets a more awesome fossil Pokemon.

For added fun, my gym itself would be relatively straightforward. But to get to it, you need to turn the power back on (a la Jurassic Park) by navigating the Safari Zone successfully. Maybe even have the gym itself in the Safari Zone, but the only way you'll get to the power switch, turn it on, and get to the gym entrance is one go is if you take exactly the right steps. Either way, you get the Jurassic Badge at the end.
