That said, I'll always have a soft spot in my heart for Guilty Gear X2 (Reload or Slash) and Soul Calibur 2.

...and Melty Blood and Fate/Unlimited Codes, but those are for personal reasons.

For a while there I would have had I tie between the first Street Fighter 2 on SNES or Mortal Kombat 2. Both were fun fighters that predated the notion that a fighting game is 100% about memorizing never ending combos. They were about learning the few special moves for your character and using them to your advantage. That was before Dead Or Alive 2: Hardcore on PS2. My friends and I put so many hours into that game rotating controllers around the room. So for me DOA2 FTW.

Honorable mentions:
Marvel vs Capcom 2 - fun, but I suck, also combo heavy
Guilty Gear X2 #Reloaded - Just got this a little while ago, haven't played it much but fun
Evil Zone - Simplistic, but fun fighter, neat special moves
Melty Blood - Best name ever, never played it much but enjoyed it
Dragon Ball Z: Budokai Tenkaichi 2 on the Wii - Interesting concept of using physical attacks mostly just to buy time to charge and execute much more powerful energy attacks, I like that system, also the special move motion/pointer controls just felt right
Smash Bros - Know moves or not, it's fun and crazy.

Games I still need to check out:
BlazBlue - looked pretty from the GT review video
Dissidia: Final Fantasy - The fighting system sounds very interesting
Street Fighter 4 - I hear it's basically SF2, but 3d, sounds good

Bloody Roar (latest - x box/game cube)

awesome combos (one of them is called Crimson Fury - a seven-move flowing combo)
and transformations (everyone is a were-creature)

Guilty Gear X-2 was crazy fun. I remember playing it the first time at a friends place and fell in love with it. Tekken 3 probably takes my vote for the best fighting game. While 5 came close to topping it, it just wasn't the same. It might be because of the final bosses. Jinpachi (sp?) was a cheap final boss compared to Ogre.

Super Smash Bros. Melee. Because I simply can't deal with the massive combo-lists you get with most other fights, I simply can't remember them, pick one and execute it in a split second. In the SSB series you get a handful of moves and you just have to string those together using your own imagination.

I don't usually play fighting games, becouse of learning curve - too boring hustle... so I really enjoyed Smash Bros serier (Brawl in mind). Sure, it's not realistic, but so is hitting a guy with an axe bigger than him three times without instant kill (Soul Calibur series), or keeping oponent in air just using light punches (juggles in most fighting games). So yeah, if you gonna defy laws of physics at least do it in flashy Dragon Ball - like style.
Great party game (aside from Rock Band) especially if you party with gamers.
