Ostrich, (farmed) buffalo brisket, gator sausage, beaver (tasted like roast beef) and wild goose in America.

Here in Japan I've had octopus and sea urchin both raw and cooked, shark fin soup, basashi (horse sashimi), and... (PLEASE don't make an issue of this) whale, also as part of a big meal in which I did not want to offend.

Crocodile as well.
Found that it did indeed taste a bit like chicken, but it meat was more fish than meat. Yet it was as strong as beef.
:D, loved
Edit:
I guess reindeer counts as well? It's kinda rare here in Sweden, considering how many reindeer we have.... but it's really nice as well. Mmmmm, sandwiches with reindeer salami.

Let's see here...

I've had emu jerky. I've had shark meat. I have salmon jerky from Alaska. I've have had venison.

There might've been another, but I have long since forgotten. Oh wait, how about calamari?

It definitely tasted like I'd expect Walrus to taste though...
Greasy?

I've had Rocky Mountain Oysters before, even though it comes from cows which aren't particularly exotic. But I mean really, how many of you can say you've had testicle before? A manlier dish doesn't exist.
I've had a sheep's testicle before, finely sliced and lightly battered. It was quite nice actually, perfect thing for a summer's day in Nice with a bit rose to wash it down with.

Wierdest thing I've eaten would have to be capybara though. Tastes a bit like pork.

It's hard to tell. Some things are exotic to some people and not to others. Rabbit and horse for instance and pretty common where I come from (the poor people's white and red meat specifically) but to many people in other parts of the world it's unthinkable to eat them.

So I'll just make a list of animals I've eaten bits of that might seem weird in some places:

-rabbit
-horse
-donkey
-snail
-frog
-bear
-alligator
-elk
-bison
-eel (eels is the one thing I've missed most since becoming a vegetarian, incidentally)
-oyster (raw and alive, specifically)

Mmmh... think that's all. What I can say is that an animal is an animal is an animal. I'm not sure why some should be "weirder" to eat than others. I guess that's why I either eat them all or none of them :p

I've tried crocodile tail, rattlesnake, a touch of shark (not a fish fan at all) but my favorite of meats would definitely be buffalo, it's damn amazing! I would never eat beef again if I had constant access to buffalo.

I've had bison burgers and that's about it as far as 'exotic' meat goes. Who knew bison could be so delicious.

Also, while it's not meat or exotic, I've accidentally eating chicken cartilage before. It's very springy.

I had an Alligator Poboy while I was in Mississippi visiting my brother and I had frog while I was camping when I was about 13....nothing more 'exotic' than that

Moose heart

It was on my friend's 10th birthday. His dad wanted to make a man out of him, so he went out and killed the largest animal he could find. Then for dinner, he fed him its heart. He couldn't eat the whole thing, so he shared it with me.

Moose isn't exactly exotic, but the organ was.
Good lord that kids dad must be the manliest thing alive

OT: Calamari, not that exciting but to the town I live in its almost like I went out and ate a Shoggoth
