Even though it wasn't much of a Boss Fight per se, killing Lance Vance in GTA: Vice City was one of the most satisfying bosses to take down for me.

Sure they generally consisted of repeated lead injections, but they were at least different.
Like having to chase after fatman, diffusing his bombs until you got a chance to punch the fucker off his rollerskates. Or the battles against sniper wolf.
And SMRPG. Sweet Jesus, I loved those bosses (even when getting my 8 year old ass handed to me by yaridovich.)

The Master Hand in Super Smash Bros for the N64

That Mo Fo was hard the first time, but then you realise how to dodge his attacks and inflict mega damage on his cooldown. pretty sweet batlle. psychedelic too

Ganondorf from Twilight Princess had to have been the funnest I've experienced. It's still fun to deflect attacks while adding a whole new dimension of interface while taking down his beast form but wielding the sword is where it's at. He's not a dumb ass AI and actually puts up a fight. It made me feel like I was in a real epic sword fight to determine the fate of Hyrule. Chasing him down with my horse was also a blast!

Arise was not too far away from Ganondorf. I expected a challenging boss with weapon skills and a few magic attacks and that's what I got, but what I didn't expect was the psychological pain he inflicted on throughout the battle, and sending in the Kratos clones. Sure it was disappointing using that craptastic stone sword but I really like the new system of health, made me worry more which was good.

I think I know who you mean, but I cant remember his name either. But you've reminded me of another bad boss. Mortal Kombat 3. Similar to the curve you just mentioned, you play the first 3 fights and its easy. No problem. Suddenly the computer starts to read your mind/pad and dodges any attack but you get through it. And face Motaro. Hes not even the last boss but he may as will be. No projectile attacks work on him.He can pick you up, hit you, teleport behind you and repeat. Each punch takes off around a quarter of your health and if he starts doing this, you can't stop him. He can reach you from half way across the screen and his moves are unblockable. Pad going through TV soon follows.

Ugh. Mortal Kombat had the worst diffuculty curve. You'd run through the first few guys pretty easily then all of a sudden the game decides that your arse has to be kicked for some reason. (says the MK fan)

Contra 4 has some amazing bosses.

I'd also have to say most of the bosses from Alice. Great, dark character design, and slightly different.

Also, the final boss fights in both Max Paynes. Something other than run n' gun, it made you do some thinking.

Again, an edit. Kochamara and the Phantom from Pyschonauts. Great one liners. One has words that, literally, can kill.

I had tonnes of fun fighting the bosses in Assassin's Creed. You saw them perform their dreadful evils, ensuring you that killing them was the right thing to do. As you stabbed them and heard their last words, there followed a desperate chase as you fought to get the gorram hell back to the bureau.

Agreed. The first three fighters are usually just fodder, and then afterwards, everyone else you fight may as well just be a damn boss. That's why I never got all the way through MK3; as much as I love it, the curve took away the fun.

MK2, however, is all sorts of rule.

I rather enjoy fighting the high level Item World Pirates in Disgaea 2.

Also, something that stays in my memory is fighting the first oversized Chainsaw wielding redneck in Stubbs the Zombie. Something about having to jab and Dodge as a shuffling zombie was challenging.

Francis in Super Paper Mario, the whole thing leading up to the battle was hilarious, and the boss himself provided a decent enough challenge.

Also, any of the bosses from killer7, just because that game was GENIUS and all the bosses were awesome. And they also took some thinking to get rid of, even with that damn ghost kid telling you how to kill them before hand. One that especially springs to mind was the assassin dude who you dropped a piece of the ceiling on top off by shooting it with a grenade launcher, which makes him kill himself. Never quite got that.
