Realistically, I couldn't eat what is basically a sentient creature.
However, I'm partial to seafood and shellfish so pretty much all the water Pokémon. Krabby? Kingler?
Funny I'm playing through Snake Eater, so I'm just imagining Ash turning to his pokedex.

It's inconsistent.... cause at some point, when they were stranded on the ship Meowth gets fed up with hunger and tries to eat it only to find out it's just scale and bone. That's when James gets fed up, it can't swim and it can't be eaten, so he kicks it into the water. Apparently Magicarp makes a decent meal. Even better, it's the Pokemon with the least personality, so no qualms about eating it.

I don't get the people who say the anime should be disregarded. Yeah I know it sucks but it's still canon, that's what the games are based on, let's all collectively deal with it.
