Dragon age two is the current example, there is nothing forcing the people to use the action controlls and yet they are acting like it is a personal insult.

The reason they hate change is because it means they have to adapt, which requires thought and energy and they are lazy. That's just about it. Same with optional sidequests. It's also possible that they have an inflated sense of self-importance and think that everything in a game should be exactly what they want rather than what the developer feels would be the best choice.
