Well to answer the initial question, people complain about anything because that's human nature. Once given something we will want something better, that is how society works
Now the question of why many fans want the Sonic franchise to end, that is a bit more complicated. You see, most of grew up with Sonic, for many of us (including myself) he is the character that got us into gaming. His games were truly unlike anything else out there. There was no set course, hell, there was no time to think just run and go! That is the kind of game that broke the cookie-cutter mold and we loved it.
Now fast-froward a bit. We enter the 3-D world, the games get a lot linear and a whole lot slower. Sure we hold on to hope to the Adventure series because it vaguely looks like the classic games we all grew up with. But then the games got weird. Strange unfamiliar characters are introduced, gimmicks attempt to replace speed, and side characters get their own automatic weapons and stories.
THIS is the moment where the classic fans realize that sonic games are no longer being made for them. They are being made for the next generation, they get their own silly characters and ridiculous game mechanics. You see, gamers are used to being coddled by game companies. Both Naughty Dog and Insomniac started out with adorable mascots Crash Bandicoot and Spryo. Then as their fans got older, their new mascots, Jack and Ratchet got to carry weapons (not real weapons but silly weapons with lazers and beams shooting out of them) And when the audience got older still they started making realistic 3rd person shooter games each with their own different levels of grittiness. But Sonic...he remained stagnant, so stagnant that he just clung on to the next generation, instead of evolving. And the die-hard fans resented him for doing this. We fans are a selfish race, we don't want the next generation to have him. Some because we cherish the nostalga he gave us and hate to see that very same character ruin himself for someone that isn't us. Others want to protect the next generation. Lets be honest, these Sonic games are ok at best. Even those that defend the games in this thread can only muster up a half-assed "well i thought it was ok." These games are not the 9s and 10s we expect from a mascot for a company. They are 6s and 7s at best. No generation should be brought up by a mascot so mediocre.
Why do we want Sonic gone, because he isn't our game character anymore. That's all.
Side note-Why is it when people in this thread want to explain that Sonic's recent games are crap they imply anal sex?
Other Side note-Both Vector and Espio (that purple guy with the horn) were characters from Knuckle's game, Knuckles Chaotix a game that came out on the Sega 32X. So technically they are older than Shadow, Bigs, Cream, and that fucking bird dude.
