Serious Sam 3 made it an available option to choose between realistic red blood, green blood (probably realistic for aliens), no blood, flowers and candy.
The latter two are a favourite, but those types of blood do clash a bit with the realism of the environment. It would be less of a thing when SS3 would have visuals like Borderlands.
Games like Soldier of Fortune had the possebility to remove limbs from other characters with carefully placed shots, but i never saw the fun in that, UT2004/UT3 had the severed limbs or just the skeleton flopping around, but due to the setting and unrealism of the graphics, it was less of an issue with me.
Mind you, I have absolutely no problem with killing loads and loads of poligon based lifeforms, be it human, robot or demon inspired.
