Food prices have been affected due to fuel prices, and the centralization of the food supply, something that would not be affected a global shift of diet. Water shortages have little to do with animals, and more to do with pollution . Personally, the only places I've been that had clean water shortages have been Iraq (We didn't do it, they've had shit for water forever) and Korea (Their apartments come furnished with those water dispensers you see in offices, if that tells you anything). Both countries have water issues due to their own reckless behavior. Could water shortages be caused by animal farming? Probably, but I've never read an actual argument for it that hasn't dripped for vege/vegan propaganda and exaggerations.
As for the methane thing... never seen a study that could honestly show how bad cows are to the environment. Methane isn't good, I'll admit to that, but like water studies, methane studies are laced with propaganda, by people who obviously were against the issue at hand before they even started.
