Depends On...

What are ya' buyin'?.. Stranger!..

Probably weapons and clothing (spiky metal plating for the guys and bare midriffs for the women). Only the finest in accurate medieval clothing.

Remember the Exploding Rounds from Mass Effect 1?
I'd sell those kind of items, awesome, but with a huge drawback.

For the ignorant of you; ME's Exploding rounds gives each of your shot AoE damage and vastly increased damage at the cost of a huge heat build-up.
The best assault rifle in the game can fire five of those rounds before overheating.

Or a Railgun that impacts for massive damage, but will break your arm.

Or, my favorite, something like the 40k plasma gun, it hits hard, it makes a mockery of armor but it has a 1 in 6 chance of catastrophically overloading, possibly killing you.

I would want to be the "guy who can get you anything". May take some time, like a few days, and may be expensive as hell, but if you want it I'll get it.

I would sell everything, I would go to great lengths to gather multiple of every object in the entire game and sell them to the player at absurd prices. Fancy armor attachments? sure, for only 400k credits, T-51B power armor? Yours for only the high high price of 80,000 caps, and so on.

Weapons and armor of course. DAMN THE FOOD VENDORS! Oh and lockpicks, why is it you can only buy these from fences? So irritating.

Guns, electronics, miscellaneous parts, and jury-rigged, working motorcycles in the Fallout universe.
That always pissed me off. In Goodsprings, they have motorcycles parked outside the bar.. plenty enough parts between them to make a good working few. and they also occasionally complain about the long way it is to Vegas.....

OT:
I'd sell music -related things :D

I'll set up shop at the starting town and sell five good items which you can't afford yet and a wide variety of useless crap that you already picked up at the tutorial, that's my best business model.

I don't know, I think being an RPG merchant would be an almost biblical curse. I'd have these guys coming up to me, turning over garbage like infected slime pustules looted from monsters, and taking my gold and valaubles away for it. I mean it's beyond me why anyone in business would want some of this stuff, and a goodly amount of it is actually gross. "Hey dude, while hunting down rat tails, I cut out 40 tumorous bladders, give me money for them!".

That said I'd probably sell magic bags, in absolutly huge sizes, that secretly teleport their contents to me every 48 hours or something. Somewhere out there would be adventurers screaming "OmG HaXxORs gOt inTo mY sTuFF" and many petitions, but in reality I, the humble in game merchant would have their loot and be putting it up on the auction house to sell back to them. Yesssss. 36 slot bags, only 50 coppers! nono that isn't a misprint... it was intended that way!".

I might also consider being a ladies only Gigolo, you know most female PCs in these things are absolutly gorgeous so you know... hard job, but someone has to do it! :)

Slaves. I wouldn't own them, only trade in them. Otherwise I would sell books, no object has such a high power density as a decent scientific book.

Depends on the setting.

WoW? Powerful equipment that matches.

Oblivion? Quest items.

Exalted? Preferably something intangible and requiring my ongoing participation, because anyone I want to interact with is probably powerful enough to kill me so hard, I'll leave a hole so deep in the Underworld specters will think Oblivion's got another Well. I want some reason for them to keep me alive and happy.

DnD? Similar to Exalted. PCs tend to be less potent then Exalts, but they're often even more murder-happy.

Lots of lockpicks, and some stuff I just found lying around... behind that door... inside the safe, past the two dead guards...

Set myself up by Novac in Fallout New Vegas and sell carts, mounts and vehicles. The wheel isn't advanced tech, you stumble across destroyed cars, motorcycles and planes with excellent condition parts. Strip them, and add a power source like a bighorner. The destroyed caravans all have carts, so its possible. Plus there are working generators for the rich customer.

Then expand into military applications, and create the infamous Battle Cattle regiment mounted on Brahmin.
