A good number of these are joke bosses, not easy bosses. Hay-zeus chreest-eh, guys.

Bob the killer goldfish, Mysterio, Lucien, The End(one meta way to kill him), the boss from You Have To Burn The Rope, Charles; these are all jokes, children! Dammit!

The three easiest boss fights I've ever done are:

1. Krom from Borderlands. He will not get off his turret and he will not shoot at you when you first enter so all you have to do is get out a sniper rifle and put four bullets in his head and clear out the MOBS.

2. The last "Story Boss" in Final Fantasy for the PSP. This is pretty typical of all Final Fantasy games but by the time I've leveled to max, completed all the bonus dungeons, do all of the Chronodia time dungeon challenges I finally just run out of stuff to do and go kill the last boss in one hit. Since in the original final fantasy the last boss is the upgraded form of the first boss it's sort of weird because he's much harder to kill in his human form as the first boss than his godlike form as the last boss.

3. The last boss in Ninja Gaiden Sigma. It's this monster made up of a bunch of skulls and when it attacks it does a alot of damage and it killed me two or three times. Until I found out when it set out all of it's skulls at once you could do the lighting spell and destroy every single one of them and kill it in one shot.

Honorable Mention: The final boss fight in Assassins Creed 2. The boss cannot block grapples so you can grab him, headbutt and knee him in the groin until he falls over, walk over and PICK HIM UP OFF THE GROUND and do it again.

The final boss of Demon's Souls. King Allant was a major pain for melee guys(my friend lost quite a few levels to him) and only slightly less for ranged characters. After you beat him and get to teh true final boss, it is basically like fighting a slug. Slow and slwo attacking and he doesn't do much damage. ranged characters can just sit back and spam attacks on him and he will be helpless. It is quite possible to just beat him down with no armor and using only your bare hands.
This after an entire game full of random buttfuckery and tough bosses made for quite a relief.

*POSSIBLE SPOILERS* Saren's first form in Mass Effect 1, since I convinced him to kill himself.
You should use the spoiler box if you're gonna do stuff like that buddy haha.
Yeah, I know, I'm just feeling rather lazy tonight. :p
Lazy is no excuse Dr. Froman!
Laziness is always an excuse!

Although the "final bosses," if you could call them that, of some recent shooters (343 Guilty Spark from Halo 3 and the Brumak from Gears of War) definitely make a good case, I think I have to give my vote to Frank Fontaine from Bioshock. He was a bit harder than those two disgraces listed above, but it was really the fact that he served as the anticlimax of a spectacular game that puts him on top.

Boss in Fable 1, all you needed was either fireball at either 3 or 4 or a bow and it took about 30sec.

Ah, yes. Frohman never ceased to amuse. Just a shame it had to come to an end. :/

Most disappointing boss: final boss in Ninja Gaiden. After hours of hacking, slashing, and getting your ass kicked, you'd expect a titanic end battle...
Run forward, press A+Y, rinse, repeat, and you're done. Did it without taking a hit.
I know what you mean, after finally getting to the end and then seeing i still had another boss fight i was about to freak out, especially after fighting him the first time... then he died in 30 seconds.

I did have a friend that managed to get killed by him though after getting that far in the game

In sharp contrast to Ninja Gaiden's final boss was the chapter 7 boss, Alma. Anyone else think she was the hardest bossfight in the game?

Sands of time against the vizier. he did barely any damage, and you were given full sand tanks. Once a friend of mine came over, and having never played the game before, beat him on his first try, and it wasn't even close. Plus there's that weird part in the end where once you beat him, he knocks you dowm in a cutscene, does the whole wny last words routine, and then back in gameplay he stands there doing nothing as you get back up and land one more combo, killing him.

Bowser in Super Mario Bros (1985, of course). Sprint under him when he jumps, which is very predictable, and hit the hammer/axe thing, pretty much all in one fluid motion. Then bam, he melts in the lava.

Easily Darth Nihilus from KOTOR II. I spent the whole game preparing myself for the inevitable fight with a Sith Lord that eats fucking planets, only to defeat him in less than a few minutes.

Easiest boss eh? Tough not to say Robotnik from Green Hill Zone. Or I could choose some of the early bosses in Super Mario World. Several bosses in FFVII are easy too, just hold O until dead.

Lucian from Fable 2.

If you can even call that a boss fight...
You really can't. It wasn't a fight, it was a video of sorts, like a cutscene.
Probably the giant shard before you get to Lucien was the final boss...
Yeah, that probably was. Still too easy though. Then again, I had mostly perfect stats and a damn near perfect gun so nothing was ever going to be that difficult for me.

I did not actually know you could do that, interesting...
I'm currently replaying this for the 4th time so I might do that. Do you need intimidation or Charm?

Yeah, you might want to spoiler warning that for people who haven't finished the game yet... Not I, but other people who are only just discovering the series.
