Lucien at the end of Fable 2. Aside from the Shard fight (which was far enough back to be only a regular boss), all you do to beat him is to traipse around kicking chickens and killing beetles for 5 minutes, then simply mash a button until the bugger is drained of energy. For me, it was Desann from Jedi Knight II. I spent the entire game chasing that guy that wiped the floor with me the first time we fought, I kill his apprentice, and then we finally meet, after hours of gameplay, for the epic final battle.
Cue 30 seconds of flailing around with my lightsaber and accidentally chopping down a column that falls of Desann.
Game over.

I would've killed it the first time round, but the stupid 4x smg used up ALL my ammo. AND you respawn without any that you lost. It was a squad-based FPS where if you died your AI team could revive you. Here is the important part so pay very close attention: I WAS DEAD WHILE THE AI FINISHED THE GAME .
I don't know how else to stress this enough. I watched the AI beat the game for me.
