Yes but the story is King Leonidas and his 300, that equals 301 soldiers.
He says in the movie he is just out for a stroll with theses 300 spartan soldiers as his personal bodyguards.

All 300 that are there do die because as you said, 1 went back.

Two Spartans survived (I think it's one with a dodgy eye and one messenger, I'll try and find the source for this)

And one more thing:

Should not be taken as an accurate representation or source of the battle of Thermopylae!
