This was in Uncharted 2 multiplayer. I jump down from a high ledge in Temple and I happen to land behind someone and stealth assassinate them. Death from above, ************.
Surprise/stealth triple kill with a shotgun in Gears of War. I snuck up behind these 4 enemies killed one rolled away, than ran up kill a second rolled, killed a third turned to kill the fourth BOOM!!!!! Turns out the fourth had a toruqe bow and was charging it the whole time i was killing his teammates
MW2. Guy running away from me in the distance. I drop him with 4 USP shots at long range without missing. Also I put a Claymore outside someone's Tactical Insertion; hilarity ensures.

not really stealth, but i don't think he expected it:
i was playing MAG the other day, siping and defending a point. some guy started capturing the point, so i got ready to fire a rocket downwards into the point.
He got a surprise rocket right to the face.

BioShock. I have a habit of seeking out lone Splicers and shooting them in the head when their backs are turned (the Natural Camoflouge (sp?) Plasmid helps a LOT)

Not exactly stealth but in Assassins creed 2 where the dude dives off the tower and leaves you to fight about 15 guards I just flung myself off the wrong side and killed him within a few steps before I hit the ground, no health damage. No actual alarm was raised. Not stealthy but technically so, according to the game.
In ME I was running down a small pipe shaft and spotted a geth. I wasn't trained in sniper rifles so I whipped out my trusted pistol. I threw him off the railing he was walking on, with throw obviously then ran up to is KD body and used overkill and blasted the rest of his sheild and killed him befor eI overheated.
What about the stealth co-op missions in MW2? Cause you don't technically have to be stealthy, just easier. Anyway, me and my friend were coordinating everything. Remember how Soap says to you "take the one on the left in 3...2....1" BLAM! That's what we were doing. It was so much fun. Also, the assassin mission in Oblivion where you get extra kudos for killing everyone in the manor without them realising that you're the crazy guy. Some woman was having a nap, so I got out the bow, sneaked into the room, and shot her in the side of the head. She went flying off the bed.
Every kill on MGS4 (yuck yuck yuck).
Seriously though, my best has definitely eluded me, because on every game I try to sneak and snipe but to memory, CoD4, i threw a C4 in a room on hardcore search and destory, shot a random bullet, jumped out of the window and hid, blew the C4 killed a couple of people, knifed some other fellow and planted the bomb, shot in the back afterwards, quite lackluster end if you ask me.

In FEAR, i managed to flank some clones (i had appeared somewhere else earlier, shooted at them, then crouched and went around them) what i didnt expect was to see one of them cautiously walk to my last position, unaware that i had managed to get behind him.
And since when you suprise an ennemy in that game, a single shot is almost always an insta-kill, i did just that to that guy.
I was quite happy to see that it was possible to do that to them, since their AI is very good and they usually are the ones who flank me.

Fallout 3. Equipped the baseball bat, went to the Overseer's chamber while he threatened his daughter. Just as things were about to get violent I opened the door and got a one-hit kill on The Overseer which launched him quite beautifully into the air and into a window. Turned around, whacked the security guard, walked off to exit the Vault with my best friend standing there covered in her father's blood.
I killed everyone I could find in the vault minus her with that bat. It stands proudly in my Tenpenny Suite waiting for the day I play again and return for the side-quest.

While mabey not quite a stealth kill, a freind and I were messing around with the swingset glitch online and I managed to launch an Infernus and it landed on him near Outlook Park, knocking him off his bike and killing him.
In Battlefield: Bad Company multiplayer, I once ran over three guys at once with a tank. They weren't expecting it, but I wouldn't call it "stealth" since it was a friggin' tank.
