Spy generally isn't a job you get. The job you probably really want is that of Collection Manager at the CIA (for example. The job is essentially the same across the board but the name might change). Their job is to recruit sources (i.e. spies). Spies are, simply put, people who have access to information some entity finds important who have been given something in exchange for said information. Their actual job consists of whatever it is that they do that gives them access to information and desperately trying not to tip anyone off that they're passing along secrets.
Alternately, you might consider a more direct collections job. There are legitimate "spies" in the sense you're probably thinking of but these are people who operate without official cover. Still, their job is generally to get information and not draw undue attention. If drawing attention is the sort of thing that you'd want to do, there are certainly jobs like that but spy is not among them. What's more, such jobs aren't the sort of thing you get to sign up for. I couldn't do more than guess as to how you'd go about landing such a job but military special operator is the most logical way, especially given that these people would represent the bulk of the assets available for black operations.
