I'd like to be a voice actor or a telecommuting film/video game critic. Yeah, I know that's a conflict of interests, but both of those are really awesome.

Programmer or owner of a big games company.
More likely I'll end up writing programmes for banks though.

Gentleman Scholar.

Independently wealthy and able to pursue any field of study that catches my current interest for no other reason than that I find it fascinating.

Yes, I was born in the wrong era. Maybe if ThePirateMan get his dream job of being a time-traveling historian he can drop me off in the past.

I'll walk you through my "vision."
Imagine: You're in a poor village in a third world country. You haven't eaten in two days. An 18 wheel flat bed truck, on the bed is a line of serving tables, behind each of which stands what appears to be a gourmet chef. A strange girl with glasses and messy brown hair steps out of the cab, raises a megaphone and announces: "Attention! Free traveling waffle bar."

This has been my ultimate dream for years, I don't know how many times I've posted about the traveling waffle bar. (Also a good response to "what would you do with x million dollars?" threads.)

Aside from that, I really want to do mission work long term. (I do short trips with my church, now, but I want to do these as a career.) I'm in a tech. school for construction sciences, and I want to apply with a Red Cross type organization when I graduate.

Special Forces officer. Highly unlikely, of course, since not only are those jobs extremely few and competitive, but the odds of me becoming a decent Army officer to begin with are pretty long.

Either that, or Bob Chipman's job. He used to get paid to watch movies and talk about why you should or shouldn't see them. Now, in addition to that, he gets paid to just talk about whatever the hell he wants to talk about. That's an awesome job.

When I was 17, I had my dream job at the time, indy pro wrestler, few fans, local fame, was amazing, shame it all got taken away.
My dream for awhile, but injury and illness stole that from me. I was saving money to attend Lance Storm's school in Calgary.

theroetical physicist. I get to dabble with the fabric of reality AND go as Gordon Freeman for the company fancy dress.
