My first answer would be GSC Game World. The guys who made STALKER. Because they interact with their customers so much, and even let their games' fans help with their games. I mean, the snork in the first STALKER game wasn't anyone at GSC's idea, it was an entry into a "Make a Mutant" competition for the game. When the STALKER: Clear Sky was in development, there was a sticky thread on their forums so people could make quests that actually had a chance to end up in the game. Then they put Starforce/TAGES in Clear Sky, and ruined it all.

My next choice would be Valve, because their games are so good and polished, as well as for Steam, which I really like, except for having to be online and such.

It's really a tie between Valve and GSC, but the DRM thing just pushes it in the direction of Valve.

Then there's Cornutopia Software, which is cool. It's a one-man team, and the games are awesome.

Deep Silver for STALKER Clear Sky.
Deep Silver for Clear Sky? No... Clear Sky would be GSC Game World. Unless you're praising the publisher for making the game they published, which they didn't.

THQ for Company of heroes/Dawn of war
Egosoft for the X series
Valve because not liking valve appears to be punishable by death nowadays (and they make great games)

Valve: Need I really say it?
Lionhead: Black & White series + Fable/Fable 2.
DICE: Mirror's Edge.
Relic Entertainment: Company of Heroes.
Westwood: Red Alert.
Criterion Studios: Sub Culture.

That's pretty much it.

Blizzard because they haven't screwed up yet.

Bungie because of their connection with their community.

Square-Enix because of the story writing.

Valve, for reasons already mentioned.
SNK for creating the KOF series.
Ubisoft for... well, a lot of good titles really.
And finally, Sega. Sure, they haven't put out much worthwhile these past few years, but the Genesis had some amazing stuff back when.

I'm gonna have to be predictable and say Rockstar games.
It's gotta be obvious why... I don't think I even have to say why.

Valve, due to their innovative (and apparently quite effective) management style and decision making processes. Also for their keen sense of talent assessment. I'd really love to talk to someone from Valve's human resources department.

Also, Blizzard for their quite amazing track record: one of their games is a fricking national sport now (Starcraft), another is a paragon for an entire genre of games (WoW). Now that's impressive. IMPRESSIVE.
I also still enjoy playing Diablo 2, having owned it since launch day. I've never owned a game with so much entertainment value.

Arenanet (Guildwars). Founded by Blizzard employees who wanted to make an MMO without subscription fees, thats the kind of people I want making my games. Infinity Ward (Call of Duty 4) deserve a mention too, I think the Call of Duty 4 engine is as a master piece. Can't wait for CoD6.

Blizzard. I still play a lot of their games to this day. Diablo 2 has a ton of replay value, as does Star Craft. Say what you want about WoW, but it is a huge game world packed with things to do and people to play with.

They are a company dedicated to quality over quantity.
And yet they still seem to vring about new IPs and sequels that don't suck...and they're rich.

EA you could learn from this, oh wait you already knew this and said 'lets just buy a lot of things have them do all the work and we'll make it sell like crack, instead of coke".
