My personal favourite guitar solo is Fade to Black by Metallica.
Other guitar solos from Metallica are Master of Puppets, One, Orion, Welcome Home (Sanitarium) and Wherever I May Roam.

From other groups I have to say the following guitar solos:

Eric Johnson - Cliffs of Dover
Iron Maiden - Aces High
Jimi Hendrix - Purple Haze

To Play or to hear? I like Playing Areodynamic (sp) by Daft punk its east but its fun to play. And To hear eh... Sultains of swing. I have a few but atm its that one.

anything by John Petrucci(Dream Theater) [especially Stream of Consciousness], Mark Knopfler (Dire Straits), Ritchie Blackmore, Jason Becker, or Steve Vai [especially For the Love of God]. Jerry Cantrell's solo in the song "Nutshell" by Alice in Chains, Marty Friedman's in Hangar 18, Tornado of Souls, and Lucretia, and Adrian Smith/Dave Murray/Janick Gers' solos in Fear of the Dark, The Trooper, Aces High, 2 Minutes to Midnight, Number of the Beast, and Wasted Years. My overall favorite has to be Duane Allman's solo for "Layla" (and yes, DUANE ALLMAN DOES THE MAJORITY OF THE SOLO IN LAYLA, NOT CLAPTON)
