That's a real good one. The only Thief level I prefer over shalebridge is the seaside manor. Also, Beldingford Manor from hitman: contracts.

Hmm... maybe the Temple of Time in Twilight Princess? If it wasn't for the annoying and repetitive music, that level would've been damn near perfect.

Also, Wizard Peak and Tree Tops (both from Spyro the Dragon) are absolutely awesome due to the large amount of supercharges and secret areas.
