Out of the games that I've picked up and played recently, The Witcher had a soundtrack that really made me feel as if I was part of the world, and really added to the medieval experience of the game. The sombre music that was present during the cutscenes was subtle enough that it wasn't really something that you remembered, but really added to the overall effect. I also found that the music that was played when you entered various taverns helped to lighten the mood. Overall, the soundtrack was one that really impressed me and I think is seriously underrated.
