Last Exile is a nice steampunk show, if you're into that sort of thing.
Cowboy Bebop and Samurai Champloo are pretty good.
xxxHolic is great, but only if you like the supernatural and can stand things like red X's appearing on people's heads.
You may not like it, but Wolf's Rain is a pretty interesting show.

Eh, it may have just been me, but Wolf's Rain really wasn't all that back in the day. I watched it on Adult Swim when I couldn't sleep.

Rurouni Kenshin. (Awesome "historical" Samurai series. This is my favorite Anime.)
