Higurashi No Naku Koro Ni. A 26 episode series that will make you shit your pants. I'd say it's even better than elfen lied at times.

I'll recommend Death Note. It's a remorselessly intellectual game of cat and mouse revolving around the properties of a magical death-dealing notebook, yet far more awesome than that description makes it sound.

Haven't seen paranoia agent mentioned yet so I'll do that now. Short spooky and damn entertaining.

Other personal favorites are Outlaw Star, Cowboy Bebop, Lupin the III, Ruroni Kenshin, Code Geass and a few others I for some reason can't remember right now.

Full Metal Alchemist you have to see and I recommend Hunter X Hunter. They are both really well done and don't waste your time with flash backs and pointless episodes that go no where.

Adventure/Comedy-drama/Mecha- Tengen Toppa Gurren Lagann (Completely epic, gets better each episode.)
Action/Bangsian fantasy- Bleach (Probably one of the best shonen animes around, but the fillers are awful.)
Psychological horror/Detective fiction- Monster (Amazing story, brilliant characters, the whole shebang.)
Romantic comedy/Science fiction- Chobits (It's good enough to get to the end, but not especially great.)
Occult detective- Majin Tantei Nogami Neuro (One of my personal favorites.)

Also, Digimon Adventure 01/02, and Digimon Tamers.

samurai champloo is probably my favourite ever...
followed by afro samurai.
then probably ghost in the shell. ghost in the shells storyline probably puled me in the deepest.
bleach is a faveourite of mine too. tho i can see why others dont like it, the pacing is pretty slow.

Other favorites include in no particular order:

Scrapped Princess (best fantasy anime I've seen yet)

Bubblegum Crisis OVA (best cyberpunk anime I've seen, also my first anime DVDs)

Full Metal Alchemist (actually just watched the first series when the second came out, now keeping up with the subs of Brotherhood on funimation.com)

Gunslinger Girl (So sad, but so awesome. The second series, so far that I've seen, doesn't live up to the first at all though)

Read or Die OVA (Fell in love with this show when I saw it crushed into a movie on CN, got the DVD the first time I saw it in a store, been meaning to check out the TV series but haven't yet)

Blood: The Last Vampire and Blood+ (best vampire anime hands down)

Neon Genesis Evangelion (like everyone else in the known anime watching universe)

Kite (may be H, but it had a sweet, tight action story and actual emotional depth, boy do you really hate the badguys by the end. Plus the fall after the bathroom fight was epic)

Nanoha (I'm not usually into Magical Girl shows, but this one had some of the best magic battling I've ever seen, particularly in A's)

The Girl Who Leapt Through Time (Entertaining, good buildup and great concept, only get's a point off because I noticed a logic mistake with the time travel)

Beyond from the Animatrix (Loved it's sort of ghost story sensibility and pretty CG layered backgrounds)

Voices of a Distant Star (Touching, amazing it was animated by 1 man)

Perfect Blue (Ausome psychological thriller, don't know what's real and what's not)

Higurashi Koro No Naka Ni (Creepy as all hell, I need to finish it still actually)

Excel Saga was awesome as it parodied everything

And as people mentioned above FLCL was trippy in an awesome way.

Melancholy of Haruhi Suzumiya is great but the Endless Eight arc is getting kindof old.

And for a couple things that fall outside of my usual watch zone but I found funny/cute:
Azu Manga Dio, K-On, and Rec. Only seen a few eps each of those so far, but always leave me smiling ^_^

Cowboy Bebop. Quite the wonderful piece, and quite strong with emotion too though somewhat stimmed in the ending of the series.

wow there are quite a few animes I've never heard of in this thread and by quite a few I mean pretty much all of them

I know I'm gonna get attacked for this but the only animes I've ever seriously watched are naruto and dragonball z and I only watched naruto because I was still in love with ninjas at the time

something about a bright orange ninja just boggles my mind when I really think about it
