Funnily enough I've just started getting back into anime after a 7 year hiates of sorts. I've begun watching GitS: 2nd GiG which has a very engaging story (although I mainly watch it for the awesome Tachikomas).

-Ninja Scroll - A very clever and well told story, fantastic animation even by today's standards

-My Neighbour Totoro - the best children's film ever. It's beauty is it doesn't have much of a storyline, replacing it with scenes that feed children's imaginations. But even grownups enjoy it. Not my personal fav Ghibli (that goes to Porco Rosso) but I think everyone must let their children watch this as a rites of passage or something.

-Evangalion - Yeah, it can be depressing, but it's one of the very few animes for teenagers that isn't insultingly shallow and dosn't rely completely on sex to sell.

-Dominion Tank Police - mainly because it's my favourite anime franchise, but the 1st four episodes are important because of how liberal they are (which to me is what anime was all about before the internet allowed for all this anime porn and crappy, meaningless teenager anime that caused me to lose faith in it all).

BTW, weren't people supposed to mention only 5? Some have bloody christmas lists on here.

CODE GEASS!! Possibly the fastest moving anime storyline I have ever seen. Full of the loads of insane twists and moments that just make you go "Bwugh?!"

I don't know much anime but the ones I've seen are pretty good.

Bleach - So fucking long but excellent, none-the-less!
Neon Genesis Evengaleon - It's been said a bunch already but it's worth saying again.
.hack/SIGN - Pretty short but great storyline and strong character development/chemistry.

Edit:

Heh heh... I haven't even seen five. Though I should add Afro Samurai. It's a movie but still very good.

Dear lord, I know my masculinity will seriously be questioned, but I don't care.

...Love Hina

To hell with you who disagree. It's funny, easy to connect with, and a great feel-good show.

Also, Evangelion (a must) and Hellsing.
Not questioning masculinity, Love Hina is a good one ^__^
and thanks everyone for ideas on Anime to watch...I've run dry over the last couple days

Voices of a Distant Star (Touching, amazing it was animated by 1 man)
This is one of my all-time favourite animes, especially considering it's only 30 minutes (give or take), so can easily be watched within practically any spare time people have avaliable. I'd also suggest his second film, "The Place Promised in Our Early Days". It's got much of the same ideas as Voices, only a longer story and generally a more fleshed-out feel to it.

I'd also agree with those who've recommended xxxHolic. Brilliant anime, with a good mix of different elements. The superstitions it brings up are very well covered.

Makoto Shinkai is a good filmmaker. His third piece "Five Centimeters per Second" may not be his overall strongest piece (I could take or leave the 2nd and 3rd segments), but the first story is well worth the price of admission/purchase.
