1. Chain Mail Shirt, to go under my clothing

This way, I am relitavly light and mobile but quite well protected. Nice heavey damage dealing hand gun, freeing up space for me to store stacks of ammo and of course the ability to get down and dirty in melee when things get up close and personal.

To your pistol situation, you have a solid case.
To your hand to hand combat situation, there needs to be some discussion. While its true that when your an expert with a weapon, it can be a valuable tool, when dealing with zombies, quickness and effectiveness come before anything else, and I believe the dual wakizashi would be cumbersome in battle. I'd recommend the spade. It's reach is good, and one swift jolt to the head will easily either decapitate or severe the spinal column near the top, essentially destroying the brain.
P-90 is not good. Not only is the accuracy a bit wonky at times, its an automatic weapon. Any automatic weapon is liability in combat. The SCAR is a good weapon, but its not being used on the battlefront for a reason. It is prone to over-heating, and is basically not a real, reliable weapon.
If we're gonna go with a shovel, then we're gonna go with a lobo (read World War Z if you don't understand this, or I'll just explain it.) Think bladed shovel. So I agree with you on that, mostly. I still think, in the hands of an expert, the wakazashi would be better, but the lobo/spade/shovel/whathaveyou is more useful in general, especially in the hands of a normal person (aka me).

As far as mid-range goes, in that case, I would go with one of two choices. First, the tired AK-47. Horrendously reliable but terrible in almost every other sense. Second (and my preferred choice) is and FN of some variety. Maybe the M240L, but only if I'm with other people to protect me while I'm using it. It was amazingly reliable, but a little hard to find spare parts for in Iraq. Also, I'd put on a bipod, probably.
In case I'm by myself, I'd probably grab an M16. Or, even better, an M4 with a SOPMOD, using the 4x sight, rail system, foregrip, flashlight, and laser. Maybe not the 4x site, depending on the situation. But you get my point.

Does having Chris Redfield with me count as having a weapon? A living weapon? I think that it should. I'd also want a crowbar and a semi-automatic rifle.

Primary 1: Naginata. I actually am trained in how to use one of those
Primary 2: Hunting Rifle. Again, I actually know how to clean and care for one.
Sidearm: Crowbar. Great for killing and useful too!

But if I can have anything, Mike Haggar, Frank West (sidearm 'cause he's the smallest) and Zangief. I'll just have them all doing Double Lariats at the same time.

30 millimeter cannon. Fires huge shells, either silver-tipped depleted uranium or napalm-filled. I'd go for Harkonnen II, a pair of automatic, belt-fed Harkonnens, but that'd be overkill.

if we are allowed to use things we could invent then i would go with a my juggernaught mech suit. (i designed it myself so don't deny its existence. even if i haven't built it.)

Wolfood's Punisher from Trigun. Machine gun, rocket launcher, and eight pistols (I think. I know there are four in the left compartment, i dont think he ever did anything with the other compartment) all in one weapon.

Melee Weapon - Having read the zombie survival guide the clear choice for this slot would be either a titanium crowbar or a heavy duty fire axe.

Sidearm - Honestly I would take whatever 9mm I can find with the larger clip size as the power of the pistol is irrelevant past being able to punch though a skull unless your lucky enough to line up several zombie heads. For those wanting something more specific a Glock 17.

Main Gun - Probably an AK-47. Mass amounts of ammo and exceptional durability.
