Hmm im gonna have 2 go with an RCP90 from Goldeneye (retro I Know) and a Bruce Campbell chainsaw arm except with the chainsaw replaced with a lightsaber.
An AT-AT should do the trick. Shoot them with the Blaster and laser cannons or just trample them. The armour is impenetrable to what ever weapons they have including the otherwise vulnerable neck (I assume the knights doesn't have any blaster weapons of high power).
I've always kinda wondered whether Plate Armor would serve as a Farraday Cage of sorts, or a lightning rod, such that current actually would NOT flow through the wearer, but go straight to the ground or just move to the outside of the armor. I don't hold much stock in this hypothesis, but I'm just wondering.
OT: Pretty much any armed aircraft/starcraft would serve. Just take off, and what options do they have? Maybe longbows or slings, but I think armor plating, miniguns, missiles, laser cannons, ion bombs etc. would probably win, even at 15,000 to 1. I think even a dreadnaught or tank could be taken down by 15,000, unless you stay out of range, which is the key. Swords in treads, jamming up motors or joints, there's a lot of little things that when repeated hundreds of times would probably disable your machine and end with you killed. Provided the knights are devoted enough to killing you after seeing you massacre several thousand of them.

A lightsaber for me. Wouldn't want to make it impossible for me to lose like some people who have picked what I can only describe as "fuck you weapons"
Could I medic gun myself? That way I could just constantly heal myself, then when I ubercharge, just go effing mental, steal a sword then go to town on 'em.

I dunno, I'd like a giant electro-magnet dangling from a large crane. Switch on, problem solved. Not sure there's a game that features an electro-magnet hanging from a crane, so to meet OP's specification, I 'll finish off any of the knights that escape their own armor with, I dunno, how about the baseball bat from Worms? Needed something that wasn't metallic.
