I didn't like Skyrim either, I did spend a lot of time with it but I couldn't stick with it to the end. Still play it occasionally on Steam and am going to start again when I find some of the better mods.
All my complaints are probably addressed through mods but for you console-ers, I really hate the combat system. The melee is just terrible, first person melee is hard but a big company should do better than a melee system of strike and dodge/block, needs combos, counters, its just horribly basic.
I completely agree there need to be some extremely strong bosses. And by strong, I don't mean ones that can kill you in two seconds, but ones that require strategy to take down. All the enemies in Skyrim just need to be attacked with basic attacks to kill, and most of them die fast, difficulty just determines how much health they have and how much damage they do, on the highest difficulty they need higher functions.
I think adding Rogue elements wouldn't help, the dungeons are so samey and boring I can't even bother to clear all the ones they already set up in the game.
