Meh, series... Try some anime movies instead.
Better animation.
It doesn't drag on.
Story quality is most often a lot better.

A few tips:
- Everything by Studio Ghibli (Porco Rosso, Princess Mononoké, Castle in the Sky, etc.)
- Ghost in the Shell; Ghost in the Shell 2: innocence
- Metropolis
- Appleseed Ex Machina
- Tekkonkinkreet
- The Girl Who Leapt Through Time
- Anything by Satoshi Kon (Tokyo Godfathers, Paprika, etc.)
- Akira
- Steamboy
- Wonderful Days

And if you insist on watching a series, I recommend these, pretty much the only ones that haven't disappointed me:
- FLCL (6 ep.)
- Paranoia Agent (13 ep.)

Ruroni Kenshin. Around 90 eps and 6 OVAs. (WATCH IT DUBBED! The english voices are actually A LOT better for some reason)
Isn't that because Kenshin in the Japanese version sounds like a ten year old?

Hahaha...Yeah, pretty much. Even DBZ in Japanese, Gohan and Goku sound horrible. Goku sounds too kiddy, even when he tries to be serious his voice is childish. At least in the English version you can tell he's pissed off.

Great Teacher Onizuka: pretty funny school slice of life thing.
Seirei No Moribito, Beautiful and emotional fantasy setting with a slight touch of magic. Can drag a little but it more than makes up for it.
If you like cars, Initial D.

Boondocks, because it's hilarious.
No, I don't think these count. Anime is pretty much just Japanese animation. Boondocks has some anime influences, in terms of the art style and some of the action beats, but they're both American productions.

P.S.: I accidentally hit the post button before writing my reply. Sorry about that.
So they have to be made in Japan to be anime? That's weird.
Well anime is the Japanese word for animation, so yeah. I figure it's kind of an exclusive term.

At least it was when I was getting into anime back in the early 2000s. Sailor Moon was anime, Ninja Turtles was a cartoon. Robotech was an anime, X-Men was a cartoon.

Maybe it's different now because a lot of anime is being exported and rebroadcast on US networks and there isn't as much American animation coming out anymore, so the distinction between the two gets blurred somewhat, but I don't see why you would call any animated show made in America an anime and not a cartoon. Terminology is what you make of it, I guess.

Another good dub to watch is Big O, the show which asks the question, "What if Bruce Wayne, instead becoming a costumed crime-fighter, piloted a giant robot in a post-apocalyptic steampunk future?" The show itself is merely above average (and that OP song... ugh), but the English dub was great.

I like the DBZ English dub too. It still has that awkwardness about it that comes from the voices having to sync with the Japanese lip movements and some of the Japanese action and comedy catch-phrases and taglines not always having appropriate English analogues, but the American voice cast was still great.

No experience with the Kenshin dub, but I didn't find the subbed version particularly offensive. To each their own, I guess.

EDIT: Might as well tack on my personal recommendations.

We've already covered most of the good epic adventures, the mindscrews, and the ultra-violent action/horror stuff, but if you want something that's sweet enough to rot your teeth out of your face I've got two recommendations.

First is the Magical Girl Lyrical Nanoha series, which has a really good story and characters for what it is (a Magical Girl show targeted at young girls). Avoid this one if you have no tolerance for loli fanservice; it's not a central part of the show but it crops up often enough to drive off anyone who doesn't have any patience for it.

Next is a lesser-known series called Kamisama Kazoku. It's about the son of God (no, really) living with his family (God included) in a Japanese-styled slice-of-life type show. I don't really remember, but I think they were trying to have him live as a human so he could understand what human life is like before becoming God himself. It sounds positively stupid on paper but I enjoyed it and it might help to cleanse the pallet after watching something like Elfen Lied or whatever.

Finally, a few recs that I'd be surprised if nobody had brought them up already.

RahXephon is a mecha anime in the Evangelion vein, although I don't think it's quite as depressing or as much of a mindscrew. Admittedly, I never finished watching it, but the first few episodes looked pretty cool.

Also, Kenran Butohsai was good. It's kind of a Martian Successor: Nadesico type show set on terraformed mars with underwater mechs.

Finally, Kiddy Grade, the show that is the pinnacle of anime titles telling you absolutely nothing about the show's content. It's a Cowboy Bebop-esque action series, and the best way I can think to describe it is a cross between Star Trek and X-Men. It's a good time, but you'll wish they had taken another season to expound more on the character backstories. There's a sequel out now called Kiddy Girl-and (yes, that is the title) but I can't personally vouch for its quality.

Mtropolis was amazing, as was The Girl Who Leapt Through Time, but Akira rubbed me the wrong way, just wasn't my thing, but that's literally just me.

(It was actually quite good, amazing even) The Disappearance of Haruhi Suzumiya
And
Summer Wars

But you've only been truly entertained by just those two series? Ah well, arguing Anime on the Escapists is a meaningless battle anyway.

I can't even watch Cardcaptor Sakura because the voices are so high. But I love Cardcaptor's.

TRIGUN!!!!!!!! Funny and lighthearted at first and gets kick ass as it builds. If you liked Cowboy Bebop, I consider it about on par with this... Though I'm not saying they are the same, they're different in a bunch of ways though. In Cowboy Bebop, almost each episode was self contained. I mean... there were only two or three two parters in that series, right? The characters are all realistic, not 'perfect' anit it had some heavy episodes... Trigun... How to put it? Its been a bit of time. Like I said, a comedy, but it builds. The characters are more unrealistic. Its got a little little bit of mystery, and gets more action as the series progresses. I would reccomend giving it a shot, but the first few episodes may not fully sell it to you right off the bat.

I personally like Jyu-Oh-Sei. The story of a boy and his twin brother who get thrown on a planet of wild plants and criminals. Not finished with it, and it can be cheesy, but it looks like it builds, and I like the artistic style. The world itself, the plants have a lot of detail put into them as well as how the people live in such a place.

Oh, Speed Grapher sounds right up your ally. Its dark, but really cool. It goes a little bit into psychology of what it is a person most desires. The main character, having been a photographer in the vietnam war most desires to kill people with his camera. When he gets this ability and learns that it was his deepest desire, he states it perfectly. How fucked up is that?! .... I actually should really emphasize this one some more. When you see some of the enemies and their deepest desires, or even just some of the random characters that show up once... pretty creepy stuff. I joke about showing it to my kid brother in law and my friends are like, "WHAT? NO! ARE YOU INSANE?!!!" I'm a little surprised that they believed me... I mean... you get the idea.

Mushishi. This one... is surprisingly... surprisingly good. Each episode that I've seen so far is self contained, with the main character going around and helping people who have problems with 'mushi' which are kind of like a primitive sometimes spiritual cross between animal... plant... bug. Or at least thats how I see it. Not every episode ends happilly, and I was originally terrified that they would completely screw up translating the short stories in the manga into an anime. I have to say, the pacing, detail, soundtrack, art... everything about it was done really well. (Though the opening won't be what sells it for you though. The opening doesn't really have that much to do with the anime, just sets the mood.) Very mellow, little action. If I had to guess, this wouldn't be a bad thing to watch with a person you're dating... But not just for that. Even if your alone I would recommend it if you can get into nice slow paced episodes. ... If you like seen Kino's Journey, (which I've only seen two episodes of) I would really, really recommend this.

Tekkonkinkreet. Awesome movie. I had no idea what I was getting into when my friend started showing it to me, it started light, and the art style seemed to support that, but it got really heavy and it was... really really cool.

Ranma 1/2... though by your list, everything sounded a lot more serious than this. Ranma is a bit of an older comedy, but I am rather drawn to it. It was reccommended to me many times and I kept putting it down until I finally read the first volume of the manga... it was cute. (Japanese... I can't stress this enough, if for whatever reason my few words persuaded you to watch this, watch it in Japanese.)

Gintama. A scifi comedy that is completely and utterly out there. Being one of my earlier entries into anime, it broke a lot of barriers and I got a real taste of what anime was like quick. I guess I consider it to be like a slightly more adult kids show. The heroes in an episode may tackle a problem, learn something along the way or end with a nice little speech. It has to do with friendship, whats really important in life... and an entire episode dedicated on the characters trying to eat beef, and the psychological mannerisms on when it is appropriate to reach for it, because they are poor and usually only eat pork rather than the expensive cow meat.

Gunslinger girl is pretty cool. Not far into it, but as far as having little girls become killing machines, I feel that it is treated seriously and looks at the psychological impact of what they do. I was originally led astray by thinking it was going to be completely shallow and stupid... at least look at the art. The art really helps get over that sort of worry when you look at it for the first time.

I've heard good things about darker than black... though I wasn't impressed by the first few episodes I've seen. If I didn't really want to see it I'd have already given up.

But this is all personal taste. Good luck finding stuff you like.

If you are mentally (un)stable enough to watch it, Evangelion all the way. ^^

Otherwise anything by Studio Ghibli, or the *first* Ghost in the Shell.

Or if you are after something funny, Nadesico, it will keep you laughing for days. (And its Eng dubs are on par with with the Jap dubs, but the same can be said for everything I have mentioned)
